Enzymatic Modification and Functional Quality Evaluation of Jade Bamboo Powder
Yuzhu is the dried rhizome of Polygonatum odoratum (Mill.) Druce, a plant in the lily family. It has the effects of nourishing yin, moistening dryness, generating fluids, and quenching thirst. Modern pharmacology believes that Yuzhu has auxiliary functions such as lowering blood sugar and antioxidation. After traditional processing, it is often difficult to powder jade bamboo due to its viscosity. Therefore, jade bamboo products on the market mainly consist of jade bamboo slices and strips. The development of jade bamboo whole powder using new methods is of great significance for expanding its uses and enhancing its value. Our research group has previously developed a fresh preparation method for jade bamboo whole powder, which can maintain the appearance and color of jade bamboo, but its flowability and blending properties are still not ideal. Enzymatic hydrolysis modification is a commonly used functional powder modification technique, and preliminary research has found that composite enzymatic hydrolysis can effectively improve the quality of Yuzhu whole powder. This experiment intends to use a multi index comprehensive evaluation method to optimize the enzymatic hydrolysis process conditions of Polygonatum sibiricum powder through response surface methodology. By comparing the in vitro antioxidant and hypoglycemic effects of different Polygonatum sibiricum powder products from multiple dimensions, the functional characteristics of enzymatically modified Polygonatum sibiricum powder will be comprehensively evaluated, aiming to provide scientific basis for enhancing the health function value and health application scope of Polygonatum sibiricum powder.

 

 

The optimized enzymatic hydrolysis process of Yuzhu whole powder resulted in an enzyme dosage of 3%, a time of 80 minutes, a temperature of 40 ℃, and a pH value of 5.5. Compared with CT, LD, ZW and other whole powder products of Polygonatum sibiricum, the Fe3+reduction ability and · OH scavenging ability of enzymatically modified whole powder of Polygonatum sibiricum were increased, and the inhibitory effect of its alcohol and water extracts on α – amylase activity was also increased. After composite enzymatic hydrolysis modification, the comprehensive quality (physical and chemical properties) of Yuzhu whole powder can be effectively improved, and its health function characteristics (in vitro antioxidant and hypoglycemic effects) can also be enhanced, indicating that the composite enzymatic hydrolysis modification process can effectively improve the application value of Yuzhu whole powder and enhance its commercial quality. Enzymatic hydrolysis modification technology has the advantages of mild reaction conditions, fast reaction, no pollution, and no introduction of other chemical substances. However, there are still problems such as high cost and difficulty in controlling reaction conditions when promoting enzymatic hydrolysis modification technology to production. Therefore, further research is needed on the modification technology and comprehensive quality evaluation technology of Yuzhu whole powder.
