Fruktoz \u015furubu, fruktoz ve glikoz ile az miktarda di\u011fer \u015fekerlerin bir kar\u0131\u015f\u0131m\u0131d\u0131r, farkl\u0131 bile\u015fenlere g\u00f6re \u015fu anda piyasada ba\u015fl\u0131ca iki \u00e7e\u015fit F42 ve F55 bulunmaktad\u0131r.<\/p>\n

F42 \u015furubu ile F55 \u015furubu aras\u0131ndaki temel farklar \u015funlard\u0131r: a. Fruktoz \u015furubunun ana bile\u015fenleri ve \u00f6zellikleri do\u011fal meyve suyuna yak\u0131nd\u0131r, meyve aromas\u0131, sakkaroz \u00f6zelliklerinden daha tatl\u0131l\u0131k ve serinlik hissi, bal aromas\u0131 ve saf tatl\u0131l\u0131k ile. \nFruktoz \u015furubu ayr\u0131ca fruktozun \u00f6zelliklerine g\u00f6re belirlenen so\u011fuk bir tatl\u0131l\u0131\u011fa sahiptir, 40 \u2103 alt\u0131nda, fruktoz tatl\u0131l\u0131\u011f\u0131n\u0131n s\u0131cakl\u0131\u011f\u0131 ne kadar d\u00fc\u015f\u00fckse, s\u00fckrozun 1.73 kat\u0131na kadar daha y\u00fcksektir. Bu \u00f6zelli\u011finden dolay\u0131 fruktoz \u015furubu serinletici i\u00e7ecekler ve di\u011fer so\u011fuk yiyecekler i\u00e7in uygundur.<\/p>\n

Fruktoz \u015furubunun kristalle\u015fmesi sakkarozdan daha zordur, bu da so\u011fuk i\u00e7ecek \u00fcr\u00fcnlerinde tek ba\u015f\u0131na sakkaroz kullan\u0131m\u0131ndan kaynaklanan y\u00fczey kristalle\u015fmesinin neden oldu\u011fu \u00fcr\u00fcn y\u00fczeyindeki sert kabuk fenomenini engellemek i\u00e7in kullan\u0131labilir.<\/p>\n

2.5 So\u011fuk i\u00e7ecek \u00fcr\u00fcnlerinin donma noktas\u0131n\u0131n d\u00fc\u015f\u00fcr\u00fclmesi<\/strong>
