A vizsg\u00e1lat azt mutatta, hogy a 2-8 pH-tartom\u00e1nyban az \u00e1fonyamagban l\u00e9v\u0151 antoci\u00e1nok jelent\u0151s sz\u00ednv\u00e1ltoz\u00e1st mutattak a m\u00e9lyv\u00f6r\u00f6st\u0151l a m\u00e9lylil\u00e1ig; a -18 \u00e9s 70 \u2103 k\u00f6z\u00f6tti kezel\u00e9si h\u0151m\u00e9rs\u00e9klet mellett az \u00e1fonyamagban l\u00e9v\u0151 antoci\u00e1nok tartalma, antioxid\u00e1ns aktivit\u00e1sa \u00e9s antibakteri\u00e1lis aktivit\u00e1sa a kezel\u00e9si id\u0151 meghosszabbod\u00e1s\u00e1val cs\u00f6kkent. Az \u00e1fonya mag antoci\u00e1nok j\u00f3 antibakteri\u00e1lis hat\u00e1st mutattak az Escherichia coli \u00e9s a Staphylococcus aureus ellen. A hat\u00e1smechanizmus a sejtmembr\u00e1n \u00e1tereszt\u0151k\u00e9pess\u00e9g\u00e9nek megzavar\u00e1sa, ami a bakt\u00e9riumoldat feh\u00e9rjetartalm\u00e1nak \u00e9s alkalikus foszfat\u00e1z tartalm\u00e1nak n\u00f6veked\u00e9s\u00e9hez vezet.<br \/>\nJelenleg az \u00e1fonya magj\u00e1b\u00f3l sz\u00e1rmaz\u00f3 antoci\u00e1nok kutat\u00e1sa \u00e9s felhaszn\u00e1l\u00e1sa els\u0151sorban az extrakci\u00f3ra, tiszt\u00edt\u00e1sra \u00e9s stabilit\u00e1sra \u00f6sszpontos\u00edt, de kev\u00e9s jelent\u00e9s sz\u00f3l az \u00e9lelmiszerrel terjed\u0151 k\u00f3rokoz\u00f3kkal szembeni g\u00e1tl\u00f3 hat\u00e1sukr\u00f3l \u00e9s mechanizmusaikr\u00f3l, amelyek nem gener\u00e1ltak t\u00f6bb felhaszn\u00e1l\u00e1si \u00e9rt\u00e9ket. Az antibakteri\u00e1lis aktivit\u00e1s tekintet\u00e9ben ez a tanulm\u00e1ny csak egy el\u0151zetes \u00e1tfog\u00f3 \u00f6sszehasonl\u00edt\u00f3 elemz\u00e9st v\u00e9gzett az \u00e1fonyat\u00f6rk\u00f6ly antoci\u00e1nok antibakteri\u00e1lis tulajdons\u00e1gair\u00f3l \u00e9s mechanizmusair\u00f3l az Escherichia coli \u00e9s a Staphylococcus aureus ellen k\u00fcl\u00f6nb\u00f6z\u0151 h\u0151m\u00e9rs\u00e9kleteken. Tov\u00e1bbi vizsg\u00e1latokra van sz\u00fcks\u00e9g a biztons\u00e1goss\u00e1guk \u00e9s az \u00e9lelmiszer-feldolgoz\u00e1si alkalmaz\u00e1suk meghat\u00e1roz\u00e1s\u00e1hoz. Ez\u00e9rt e tanulm\u00e1ny eredm\u00e9nyei alapj\u00e1n az \u00e1fonya magj\u00e1b\u00f3l sz\u00e1rmaz\u00f3 antoci\u00e1nok fejleszt\u00e9se \u00e9s felhaszn\u00e1l\u00e1sa sor\u00e1n az extrakci\u00f3s, tiszt\u00edt\u00e1si, feldolgoz\u00e1si \u00e9s t\u00e1rol\u00e1si folyamatokat a megfelel\u0151 pH-nak \u00e9s h\u0151m\u00e9rs\u00e9kletnek megfelel\u0151en lehet kiv\u00e1lasztani.
