Cet article prend le jus de citron comme exemple pour explorer l'effet protecteur de l'\u00e9rythritol sur la vitamine C dans le jus de citron le matin.<\/p>\n<p><strong>Cin\u00e9tique de d\u00e9gradation thermique de la vitamine C dans le jus de citron<\/strong><br \/>\n<strong>\u00c9tude cin\u00e9tique de la d\u00e9gradation thermique<\/strong><\/p>\n<p>Les tendances de la teneur en vitamine C dans les boissons \u00e0 base de jus de citron en fonction du temps \u00e0 diff\u00e9rentes temp\u00e9ratures ont \u00e9t\u00e9 obtenues par d\u00e9termination exp\u00e9rimentale et ajust\u00e9es, et les r\u00e9sultats de l'ajustement sont pr\u00e9sent\u00e9s dans la figure 1.<br \/>\nLa figure 1 montre que la teneur en vitamine C diminue progressivement avec l'allongement de la dur\u00e9e de conservation de la boisson au jus de citron et que son taux de d\u00e9composition s'acc\u00e9l\u00e8re avec l'augmentation de la temp\u00e9rature. Le taux de conservation de la vitamine C \u00e9tait de 60,82%, 31,98 et 8,48% pour 16 semaines de stockage dans des conditions environnementales de 20, 30 et 40\u00b0C, respectivement.<\/p>\n<p>Les r\u00e9sultats de l'ajustement ont montr\u00e9 que la d\u00e9composition de la vitamine C dans les boissons \u00e0 base de jus de citron \u00e0 diff\u00e9rentes temp\u00e9ratures \u00e9tait mod\u00e9lis\u00e9e par un mod\u00e8le cin\u00e9tique de r\u00e9action du premier ordre, \u00e0 savoir<br \/>\nLa constante de vitesse de d\u00e9composition k de la vitamine C \u00e0 diff\u00e9rentes temp\u00e9ratures a \u00e9t\u00e9 calcul\u00e9e \u00e0 partir de l'\u00e9quation (1) sur la base des donn\u00e9es exp\u00e9rimentales et analys\u00e9e par r\u00e9gression lin\u00e9aire, obtenue en prenant le logarithme des c\u00f4t\u00e9s gauche et droit de l'\u00e9quation d'Arrhenius en m\u00eame temps :<br \/>\nSelon l'\u00e9quation (2) ci-dessus, le logarithme Ink de la constante de vitesse de la r\u00e9action primaire de la vitamine C a \u00e9t\u00e9 trac\u00e9 en fonction de l'inverse 1\/T \u00e0 gauche de la temp\u00e9rature de stockage, comme le montre la figure 2, et l'\u00e9nergie d'activation Ea et le facteur de transmission A ont \u00e9t\u00e9 obtenus \u00e0 partir de la pente et de l'ordonn\u00e9e \u00e0 l'origine de la ligne droite, respectivement, et les r\u00e9sultats sont pr\u00e9sent\u00e9s dans le tableau 2.<br \/>\nOn consid\u00e8re g\u00e9n\u00e9ralement que l'\u00e9nergie d'activation Ea d'une r\u00e9action chimique est comprise entre 40 et 400kJ\/mol, et que plus l'\u00e9nergie d'activation Ea est faible, plus la r\u00e9action est facile \u00e0 mettre en \u0153uvre. Lorsque Ea  400kJ\/mol, la vitesse de r\u00e9action est tr\u00e8s faible. Le tableau 2 montre que la vitamine C de la boisson au jus de citron se d\u00e9grade facilement au cours du processus de stockage.<\/p>\n<p><strong>Effet de l'\u00e9rythritol sur la vitamine C<\/strong><br \/>\n<strong>Effet de l'\u00e9rythritol sur le taux de d\u00e9gradation de la vitamine C<\/strong><\/p>\n<p>Les effets des diff\u00e9rentes additions d'\u00e9rythritol sur la teneur en vitamine C des boissons \u00e0 base de jus de citron au fil du temps ont \u00e9t\u00e9 d\u00e9termin\u00e9s exp\u00e9rimentalement \u00e0 temp\u00e9rature constante et ajust\u00e9s \u00e0 la tendance, et les r\u00e9sultats sont pr\u00e9sent\u00e9s dans les figures 3 \u00e0 5.<\/p>\n<p>Les r\u00e9sultats de l'ajustement ont montr\u00e9 que le taux de d\u00e9gradation de la vitamine C dans la boisson au jus de citron en fonction du temps dans les conditions susmentionn\u00e9es \u00e9tait conforme au mod\u00e8le cin\u00e9tique de r\u00e9action du premier ordre. Les figures 3 \u00e0 5 montrent que le taux de d\u00e9composition de la vitamine C ralentit avec l'augmentation de l'ajout d'\u00e9rythritol \u00e0 temp\u00e9rature constante, et que les taux de r\u00e9tention de la vitamine C apr\u00e8s 16 semaines de stockage ont tous augment\u00e9 \u00e0 des degr\u00e9s diff\u00e9rents par rapport au contr\u00f4le (pas d'ajout).<\/p>\n<p>D'apr\u00e8s les donn\u00e9es exp\u00e9rimentales ci-dessus, les constantes de vitesse de d\u00e9composition k et l'\u00e9nergie d'activation correspondante Ea et le facteur d'avance rapide A de la vitamine C dans diff\u00e9rentes conditions ont \u00e9t\u00e9 calcul\u00e9s par Eq. (1) et Eq.
