La stabilit\u00e9 du pigment rouge de poivron \u00e0 la lumi\u00e8re int\u00e9rieure est meilleure, certaines \u00e9tudes montrent que : plac\u00e9 \u00e0 l'int\u00e9rieur pendant 4 semaines, il n'y a pas de ph\u00e9nom\u00e8ne de d\u00e9coloration, mais lorsqu'il est directement expos\u00e9 \u00e0 une forte lumi\u00e8re ext\u00e9rieure, il se d\u00e9colore plus facilement ; la temp\u00e9rature du pigment rouge de poivron a \u00e9galement un certain impact, plus la temp\u00e9rature est \u00e9lev\u00e9e, plus la perte de pigment est importante ; sa r\u00e9sistance \u00e0 l'acide et \u00e0 l'alcali est meilleure, dans une valeur PH comprise entre 3 et 12, la couleur et le lustre sont stables ; il est r\u00e9sistant \u00e0 la r\u00e9duction, mais pas \u00e0 l'oxydation.<\/p>\n<p><strong>La s\u00e9curit\u00e9 :<\/strong> Le pigment rouge de Capsicum a \u00e9t\u00e9 \u00e9valu\u00e9 par l'Organisation des Nations Unies pour l'alimentation et l'agriculture (FAO), le Royaume-Uni, le Japon et l'Organisation mondiale de la sant\u00e9 (OMS) comme colorant alimentaire naturel sans limite d'utilisation.<\/p>\n<p>En Chine, l'utilisation des additifs alimentaires a toujours \u00e9t\u00e9 plus stricte.
