{"id":9218,"date":"2024-08-23T07:02:40","date_gmt":"2024-08-23T07:02:40","guid":{"rendered":"https:\/\/longchangextracts.com\/?p=9218"},"modified":"2024-08-23T07:02:40","modified_gmt":"2024-08-23T07:02:40","slug":"3-functional-sweeteners","status":"publish","type":"post","link":"https:\/\/longchangextracts.com\/fr\/3-functional-sweeteners\/","title":{"rendered":"Comment trois \u00e9dulcorants fonctionnels am\u00e9liorent-ils l'absorption de l'eau de trempage du riz et sa texture ?"},"content":{"rendered":"<p>Apr\u00e8s le trempage, le riz absorbe l'eau et se dilate, ce qui favorise l'absorption de l'eau par l'amidon interne et l'agglom\u00e9ration homog\u00e8ne de l'amidon de riz dans le processus de cuisson, raccourcissant ainsi le temps de cuisson. <strong>Plus le taux d'absorption d'eau du riz apr\u00e8s trempage est \u00e9lev\u00e9, plus la qualit\u00e9 comestible du riz apr\u00e8s cuisson est \u00e9lev\u00e9e.<\/strong><\/p>\n<p>Le riz a \u00e9t\u00e9 immerg\u00e9 dans diff\u00e9rentes fractions de masse de solutions d'oligofructose, de sorbitol et de maltitol, respectivement, et il ressort de la figure 1 que <strong>l'ajout des trois \u00e9dulcorants a permis d'augmenter le taux d'absorption d'eau du riz par rapport au groupe t\u00e9moin.<\/strong><\/p>\n<p>\u00c0 un temps de trempage de 5 minutes, l'absorption d'eau du riz a augment\u00e9 de mani\u00e8re significative (P &lt; 0,05) de 41,23% et de 34,93% sous les traitements de 1,6% d&#039;oligofructose et de 0,4% de sorbitol, respectivement.<\/p>\n<p>Parmi eux, l'absorption d'eau du riz trait\u00e9 avec 1,6% d'oligofructose, 0,4% de sorbitol et 1,6% de maltitol a \u00e9t\u00e9 significativement augment\u00e9e de 11,18%, 13,16% et 12,94%, respectivement, par rapport au groupe t\u00e9moin \u00e0 la dur\u00e9e de trempage de 25 min, et le taux d'absorption d'eau s'est stabilis\u00e9 apr\u00e8s 25 min de temps de trempage.<\/p>\n<p>L'alcool de sucre est obtenu en rempla\u00e7ant le groupe ald\u00e9hyde par un groupe hydroxyle, et la structure multi-hydroxyle lui donne la capacit\u00e9 de se combiner avec l'eau et poss\u00e8de un certain degr\u00e9 d'absorption de l'eau.
