Sa consommation et sa culture remontent \u00e0 plus de 5 000 \u00e0 7 000 ans. Le quinoa a une grande valeur nutritionnelle, il est riche en ph\u00e9nols et en flavonols, et il a des activit\u00e9s antioxydantes, r\u00e9gulatrices du syst\u00e8me immunitaire et anticanc\u00e9reuses. Au d\u00e9but des ann\u00e9es 1960, la Chine a commenc\u00e9 \u00e0 introduire des ressources en quinoa. Ces derni\u00e8res ann\u00e9es, la superficie des plantations de quinoa en Chine s'est rapidement \u00e9tendue. En 2019, la superficie estim\u00e9e de plantation de quinoa en Chine d\u00e9passait 20000 m\u00e8tres carr\u00e9s, avec une production totale de 20000 \u00e0 30000 tonnes. Cette exp\u00e9rience a utilis\u00e9 le son de quinoa comme mat\u00e9riel exp\u00e9rimental pour optimiser le processus d'extraction ultrasonique des saponines totales. Sur la base d'exp\u00e9riences \u00e0 facteur unique, le rapport liquide\/mati\u00e8re, la concentration d'\u00e9thanol, la dur\u00e9e et la temp\u00e9rature des ultrasons ont \u00e9t\u00e9 s\u00e9lectionn\u00e9s comme variables ind\u00e9pendantes, et le rendement d'extraction des saponines totales du son de quinoa a \u00e9t\u00e9 utilis\u00e9 comme valeur de r\u00e9ponse. Parall\u00e8lement, une \u00e9quation de cin\u00e9tique de r\u00e9action enzymatique a \u00e9t\u00e9 \u00e9tablie pour analyser sa cin\u00e9tique d'inhibition, et le m\u00e9canisme d'inhibition de l'extrait de son de quinoa sur l'alpha glucosidase a \u00e9t\u00e9 \u00e9tudi\u00e9, afin d'explorer le potentiel de d\u00e9veloppement du son de quinoa en tant qu'inhibiteur de l'alpha glucosidase et de fournir une base th\u00e9orique et des donn\u00e9es \u00e0 l'appui du d\u00e9veloppement et de l'utilisation futurs du son de quinoa.<\/p>\n<p>Le processus optimal d'extraction ultrasonique des saponines du son de quinoa a \u00e9t\u00e9 optimis\u00e9 en utilisant la m\u00e9thodologie de la surface de r\u00e9ponse, avec un rapport liquide\/mati\u00e8re de 15mL\/g, une extraction ultrasonique \u00e0 l'\u00e9thanol de 75%, une dur\u00e9e d'ultrasons de 1,5 heure et une temp\u00e9rature d'ultrasons de 45 \u2103. Ce proc\u00e9d\u00e9 pr\u00e9sente des conditions simples, un fonctionnement et un contr\u00f4le faciles, une bonne stabilit\u00e9 et permet de surmonter les inconv\u00e9nients des m\u00e9thodes conventionnelles telles que la longue dur\u00e9e d'extraction et les \u00e9tapes fastidieuses du traitement thermique.<\/p>\n<p>L'exp\u00e9rience sur l'activit\u00e9 inhibitrice de l'\u03b1-glucosidase a montr\u00e9 que l'extrait de saponine totale du son de quinoa avait une activit\u00e9 inhibitrice significativement plus forte que l'acarbose, un inhibiteur de l'\u03b1-glucosidase disponible dans le commerce (P&lt;0,05), et il est pr\u00e9vu d&#039;isoler des inhibiteurs de l&#039;\u03b1-glucosidase s\u00fbrs et efficaces \u00e0 partir de cet extrait.
