La luzerne a un rendement \u00e9lev\u00e9 et un prix de march\u00e9 bas, ce qui en fait une ressource naturelle de haute qualit\u00e9. En outre, la teneur en prot\u00e9ines brutes des feuilles de luzerne peut atteindre environ 70%, et il existe de nombreux types d'acides amin\u00e9s, dont 40,6% d'acides amin\u00e9s essentiels pour le corps humain. Par cons\u00e9quent, afin de compenser le manque de propri\u00e9t\u00e9s \u00e9mulsifiantes des ALPC, cette \u00e9tude a optimis\u00e9 la pr\u00e9paration du composite en utilisant la m\u00e9thode de modification par glycosylation et a \u00e9tudi\u00e9 ses propri\u00e9t\u00e9s \u00e9mulsifiantes.<\/p>\n<p>Des recherches ont montr\u00e9 que les polysaccharides peuvent am\u00e9liorer les propri\u00e9t\u00e9s \u00e9mulsifiantes des prot\u00e9ines. La temp\u00e9rature de la r\u00e9action s\u00e8che est limit\u00e9e, g\u00e9n\u00e9ralement entre 60 et 65 \u2103, tandis que la temp\u00e9rature de la r\u00e9action humide est plus \u00e9tendue, incluant g\u00e9n\u00e9ralement des r\u00e9actions \u00e0 basse temp\u00e9rature (60-62 \u2103) et \u00e0 haute temp\u00e9rature (100-120 \u2103). La meilleure \u00e9mulsification a \u00e9t\u00e9 obtenue dans ces conditions. Dans ces conditions, la propri\u00e9t\u00e9 \u00e9mulsifiante du produit peut atteindre 200,78 \u33a1\/g, soit 12,20% de plus que la prot\u00e9ine non modifi\u00e9e. La stabilit\u00e9 de l'\u00e9mulsion a augment\u00e9 de 31,83%, et le degr\u00e9 de greffage dans des conditions optimales a atteint 23,9%. L'analyse de caract\u00e9risation de la structure FG de ses ALPC a r\u00e9v\u00e9l\u00e9 la pr\u00e9sence de structures d'anneaux de sucre dans le spectre infrarouge, indiquant un greffage r\u00e9ussi de FG sur la prot\u00e9ine de feuille de luzerne ; les r\u00e9sultats de l'analyse de la taille des particules indiquent que la r\u00e9action de glycosylation entra\u00eene une augmentation de la taille des particules ; le sch\u00e9ma de diffraction des rayons X indique un changement de la taille des grains du composite, indiquant l'apparition d'une r\u00e9action de glycosylation ; les r\u00e9sultats de la microscopie \u00e9lectronique \u00e0 balayage indiquent que la densit\u00e9 de surface du composite augmente et que la structure est amorphe.
