Des \u00e9tudes r\u00e9centes ont montr\u00e9 que les ROS sont \u00e9troitement li\u00e9s \u00e0 de nombreux ph\u00e9nom\u00e8nes pathologiques et physiologiques, tels que les tumeurs, l'inflammation, le vieillissement et les troubles circulatoires. Lorsque l'\u00e9quilibre dynamique entre l'oxydation et les antioxydants dans l'organisme est perturb\u00e9, les ROS surcharg\u00e9s attaquent les organes cibles, d\u00e9clenchant une r\u00e9action en cha\u00eene de radicaux alkyles insatur\u00e9s. Les peroxydes qui en r\u00e9sultent peuvent provoquer la peroxydation des lipides de la membrane cellulaire, endommager le squelette de l'acide nucl\u00e9ique et les liaisons peptidiques des prot\u00e9ines, et conduire \u00e0 l'apoptose des cellules. Les antioxydants peuvent \u00eatre class\u00e9s en sources naturelles et synth\u00e9tiques. Les antioxydants naturels tels que les tocoph\u00e9rols, les flavono\u00efdes et les polysaccharides sulfat\u00e9s, ainsi que les antioxydants synth\u00e9tiques tels que le tert-butylhydroquinone (TBHQ), le gallate de propyle (PG), l'hydroxytolu\u00e8ne butyl\u00e9 (BHT) et l'hydroxyanisole butyl\u00e9 (BHA). Les antioxydants synth\u00e9tis\u00e9s artificiellement ont de graves effets secondaires toxiques sur le foie et les reins, ce qui pose des probl\u00e8mes de s\u00e9curit\u00e9 lors de leur utilisation, alors que les antioxydants naturels peuvent \u00e9viter ces effets secondaires. Il est donc tr\u00e8s important de d\u00e9couvrir des antioxydants naturels capables de bloquer efficacement les r\u00e9actions des radicaux libres de l'oxyg\u00e8ne et ayant peu d'effets secondaires toxiques pour la pr\u00e9vention et le traitement des maladies li\u00e9es au d\u00e9s\u00e9quilibre des radicaux libres. Les organismes marins sont tr\u00e8s appr\u00e9ci\u00e9s pour leurs divers composants nutritionnels et leurs substances physiologiquement actives, dont certaines ne sont pas pr\u00e9sentes dans les plantes terrestres. La recherche a montr\u00e9 que les organismes marins tels que les algues et les concombres de mer contiennent de nombreuses substances antioxydantes naturelles actives. Leurs tissus contiennent de nombreux pi\u00e9geurs de radicaux libres et antioxydants qui \u00e9liminent directement les radicaux libres ou renforcent le syst\u00e8me de d\u00e9fense antioxydant de l'organisme. C'est pourquoi cet article se propose de commencer par l'extraction de substances bioactives \u00e0 partir de trois types d'algues (algues marines, algues de mer et algues de mouton) et d'un type de concombre de mer (concombre de mer rugueux), puis de les isoler et de les d\u00e9tecter de mani\u00e8re syst\u00e9matique. L'accent est mis sur l'\u00e9tude des effets antioxydants de ces polysaccharides sulfat\u00e9s d'origine marine et sur le d\u00e9pistage des substances antioxydantes qui inhibent l'activit\u00e9 des radicaux libres et de la polyph\u00e9nol-oxydase, afin d'\u00e9largir les ressources biologiques d'antioxydants naturels m\u00e9dicinaux.<\/p>\n<p>Les polysaccharides sont des polym\u00e8res de poids mol\u00e9culaire \u00e9lev\u00e9 compos\u00e9s de dix monosaccharides ou plus li\u00e9s par des liaisons glycosidiques, et poss\u00e8dent un large \u00e9ventail d'activit\u00e9s pharmacologiques. De nombreuses \u00e9tudes ont montr\u00e9 que ce pi\u00e9geur de radicaux libres hautement efficace et peu toxique prot\u00e8ge l'organisme des dommages caus\u00e9s par l'oxyg\u00e8ne, a des effets antioxydants en \u00e9liminant les anions superoxydes, en stabilisant les radicaux libres et autres ROS dans l'organisme, et participe ainsi \u00e0 divers processus physiologiques et pathologiques importants tels que les processus antithrombotiques, hypolipid\u00e9miants, hypoglyc\u00e9miques, de r\u00e9gulation immunitaire, antitumoraux, anti-inflammatoires, antivieillissement, etc. Dans les r\u00e9sultats de nos recherches, l'UPSP et la PSP ont montr\u00e9 certains effets antioxydants et, combin\u00e9s aux donn\u00e9es de la SFSP et de la HSSP, il a \u00e9t\u00e9 constat\u00e9 que ces polysaccharides sulfat\u00e9s d'origine marine ont des effets significatifs dans le pi\u00e9geage des radicaux libres, ce qui sugg\u00e8re que ces polysaccharides sulfat\u00e9s peuvent avoir des activit\u00e9s anti-inflammatoires, antivieillissement et autres. Ces derni\u00e8res ann\u00e9es, des rapports ont \u00e9t\u00e9 publi\u00e9s sur les effets antioxydants des polysaccharides provenant de sources naturelles, les plantes terrestres et la m\u00e9decine traditionnelle chinoise repr\u00e9sentant encore une certaine proportion. Les polysaccharides d'origine marine proviennent principalement d'algues, tandis que les rapports sur les sources de concombre de mer sont relativement rares. Les r\u00e9sultats de cette \u00e9tude indiquent que les polysaccharides sulfat\u00e9s d\u00e9riv\u00e9s des algues et du concombre de mer peuvent exercer des effets antioxydants en \u00e9liminant les radicaux libres stables et les anions superoxydes, et en inhibant l'activit\u00e9 de la polyph\u00e9nol-oxydase. \u00c0 l'avenir, des recherches seront men\u00e9es sur la composition et la structure de ces polysaccharides sulfat\u00e9s, ainsi que sur leur relation avec les ROS et l'activit\u00e9 inhibitrice de la polyph\u00e9nol-oxydase, afin d'explorer plus avant leurs m\u00e9canismes d'am\u00e9lioration de la capacit\u00e9 antioxydante de l'organisme au niveau in vivo.
