Elle a un contenu nutritionnel complet, des effets b\u00e9n\u00e9fiques importants sur la sant\u00e9 et une forte capacit\u00e9 \u00e0 r\u00e9sister \u00e0 l'adversit\u00e9 et au stress. Parmi eux, les saponines sont ses principaux nutriments, qui ont des activit\u00e9s biologiques telles que des propri\u00e9t\u00e9s antioxydantes et de pi\u00e9geage des radicaux libres, analg\u00e9siques, anti-inflammatoires et antifongiques, et peuvent \u00eatre utilis\u00e9es comme mati\u00e8res premi\u00e8res dans l'industrie pharmaceutique. L'\u00e9tude de l'activit\u00e9 biologique des saponines de quinoa se concentre principalement sur l'activit\u00e9 antioxydante, l'activit\u00e9 antibact\u00e9rienne et l'am\u00e9lioration du syst\u00e8me immunitaire. Pour am\u00e9liorer encore le taux d'extraction des saponines de quinoa, des chercheurs nationaux et \u00e9trangers ont introduit des effets auxiliaires tels que les ultrasons et les micro-ondes pour am\u00e9liorer la m\u00e9thode d'extraction des saponines de quinoa.<br \/>\nCet article utilise des graines de quinoa blanc comme mati\u00e8res premi\u00e8res et introduit une pression n\u00e9gative externe bas\u00e9e sur une m\u00e9thode d'extraction assist\u00e9e par ultrasons afin d'explorer les effets de la dur\u00e9e des ultrasons, de la temp\u00e9rature et des conditions de fonctionnement de la pression n\u00e9gative sur le taux d'extraction des saponines de quinoa. Les conditions optimales du processus d'extraction des saponines de quinoa assist\u00e9e par pression n\u00e9gative des ultrasons ont \u00e9t\u00e9 obtenues par le biais d'exp\u00e9riences de surface de r\u00e9ponse, fournissant des donn\u00e9es pour une extraction efficace et \u00e9cologique des saponines de quinoa et le d\u00e9veloppement de produits connexes. L'extrait brut de saponines de quinoa a \u00e9t\u00e9 s\u00e9par\u00e9 et purifi\u00e9 en utilisant la m\u00e9thode d'extraction au n-butanol satur\u00e9 pour obtenir les saponines totales de quinoa. Des exp\u00e9riences d'activit\u00e9 in vitro ont \u00e9t\u00e9 men\u00e9es pour \u00e9tudier son activit\u00e9 antioxydante. Cette \u00e9tude constituera une r\u00e9f\u00e9rence importante pour la production et la pr\u00e9paration des saponines de quinoa, ainsi que pour leur application et leur m\u00e9canisme en m\u00e9decine et dans les aliments fonctionnels. Ils seront \u00e9galement b\u00e9n\u00e9fiques pour le d\u00e9veloppement et l'utilisation ult\u00e9rieurs de ces saponines, l'\u00e9largissement du champ d'application et de la valeur commerciale du quinoa, ainsi que pour l'utilisation compl\u00e8te et efficace des ressources de quinoa.<\/p>\n<p>En utilisant l'extraction des saponines des graines de quinoa assist\u00e9e par pression n\u00e9gative des ultrasons, une exp\u00e9rience \u00e0 facteur unique (dur\u00e9e des ultrasons, temp\u00e9rature des ultrasons et pression n\u00e9gative) a \u00e9t\u00e9 men\u00e9e pour \u00e9tudier les effets de la dur\u00e9e des ultrasons, de la temp\u00e9rature des ultrasons et de la pression n\u00e9gative sur le rendement des saponines de quinoa. Les conditions optimales du processus d'extraction des saponines de quinoa ont \u00e9t\u00e9 obtenues par la m\u00e9thodologie de la surface de r\u00e9ponse : dur\u00e9e des ultrasons de 20 minutes, temp\u00e9rature des ultrasons de 59 \u2103 et pression n\u00e9gative de 0,064 MPa. Dans ces conditions, le rendement en saponines de quinoa \u00e9tait le plus \u00e9lev\u00e9 (11,95 \u00b1 0,034 mg\/g), ce qui \u00e9tait proche du rendement pr\u00e9dit en saponines de quinoa (12,37 mg\/g). L'ordre d'influence des trois facteurs sur le rendement des saponines de quinoa est le suivant : pression n\u00e9gative&gt;temp\u00e9rature des ultrasons&gt;temps des ultrasons. L'\u00e9tude de l'activit\u00e9 antioxydante des saponines de quinoa purifi\u00e9es par extraction au n-butanol a montr\u00e9 que dans la gamme de concentration s\u00e9lectionn\u00e9e (0-0,25mg\/mL), les saponines de quinoa avaient un fort pouvoir r\u00e9ducteur et la capacit\u00e9 de pi\u00e9ger les radicaux libres DPPH, qui \u00e9taient positivement corr\u00e9l\u00e9s avec leur concentration.
