Les macrophages exercent leur fonction immunitaire en s\u00e9cr\u00e9tant diverses cytokines telles que le monoxyde d'azote (NO), le facteur de n\u00e9crose tumorale \u03b1 (TNF-\u03b1), l'interleukine-6 (IL-6), l'interf\u00e9ron \u03b2 (IFN-\u03b2), l'interleukine-1 (IL-1), etc. Les polysaccharides v\u00e9g\u00e9taux r\u00e9gulent la fonction immunitaire des macrophages en modulant la s\u00e9cr\u00e9tion de cytokines. Le NO, en tant que mol\u00e9cule de signalisation importante, assure la m\u00e9diation de diverses fonctions biologiques au sein des cellules et contribue \u00e0 tuer les cellules tumorales et les micro-organismes pathog\u00e8nes. Le TNF-\u03b1 peut \u00eatre produit par les macrophages activ\u00e9s et peut participer directement au maintien de l'hom\u00e9ostasie immunitaire, y compris l'inflammation, la diff\u00e9renciation, le m\u00e9tabolisme des lipides et l'apoptose.
