Les feuilles d'Hippophae rhamnoides ont \u00e9galement \u00e9t\u00e9 incluses dans la liste des nouvelles ressources alimentaires au cours des derni\u00e8res ann\u00e9es. La Chine est le pays qui poss\u00e8de les ressources naturelles de germoplasme d'argousier les plus riches au monde. Elle est non seulement riche en ressources d'argousier sauvage, mais c'est aussi le pays qui poss\u00e8de la plus grande superficie d'argousier plant\u00e9 artificiellement. L'argousier est l'une des esp\u00e8ces d'arbres les plus importantes de la for\u00eat de protection des \"Trois Nord\". Selon les statistiques, en janvier 2022, la superficie totale de plantation d'argousier en Chine \u00e9tait d'environ 31,07 millions de mu, ce qui repr\u00e9sente plus de 90% de la plantation d'argousier dans le monde. Le fruit de l'argousier est consid\u00e9r\u00e9 comme une bonne ressource v\u00e9g\u00e9tale pour pr\u00e9venir et traiter les maladies cardiovasculaires, le diab\u00e8te, les maladies inflammatoires, les maladies de la peau, les ulc\u00e8res gastriques et m\u00eame le cancer, car il est riche en vitamines, en flavono\u00efdes, en polyph\u00e9nols, en acides organiques, en linol\u00e9ine, en acides amin\u00e9s essentiels et en autres substances biologiques actives.<\/p>\n<p>Actuellement, l'industrie chinoise de l'argousier se concentre principalement sur le traitement des boissons et l'extraction de l'huile d'argousier. Parmi eux, Zeng et al. ont d\u00e9couvert que le pr\u00e9traitement par micro-ondes combin\u00e9 \u00e0 une extraction par solvant acc\u00e9l\u00e9r\u00e9e \u00e0 court terme peut am\u00e9liorer la qualit\u00e9 nutritionnelle de l'huile d'argousier ; Liu et al. ont optimis\u00e9 le processus d'extraction de l'huile de fruits d'argousier ; Fu et al. ont d\u00e9velopp\u00e9 des boissons ferment\u00e9es \u00e0 base d'argousier en utilisant la pulpe d'argousier comme mati\u00e8re premi\u00e8re ; Li a analys\u00e9 l'\u00e9tat actuel de la transformation du vin de fruits d'argousier afin de promouvoir son d\u00e9veloppement. La teneur en fibres alimentaires des r\u00e9sidus de fruits d'argousier est sup\u00e9rieure \u00e0 50%. Elles peuvent favoriser la prolif\u00e9ration de bact\u00e9ries intestinales b\u00e9n\u00e9fiques, augmenter la capacit\u00e9 d'absorption du corps humain, r\u00e9duire le cholest\u00e9rol et les triglyc\u00e9rides dans le plasma et aider \u00e0 contr\u00f4ler les effets sur la sant\u00e9 tels que l'ob\u00e9sit\u00e9.<\/p>\n<p>Sur cette base, cette \u00e9tude a optimis\u00e9 le processus d'extraction des fibres alimentaires solubles (SDF) et insolubles (IDF) des r\u00e9sidus de fruits d'argousier dans l'industrie du vin de fruits d'argousier, et a compar\u00e9 l'applicabilit\u00e9 de diff\u00e9rentes fibres alimentaires. L'objectif est de fournir une r\u00e9f\u00e9rence th\u00e9orique pour l'utilisation compl\u00e8te des ressources de d\u00e9chets dans l'industrie de l'argousier, la production de produits de fibres alimentaires \u00e0 haute valeur ajout\u00e9e avec diff\u00e9rents types d'utilisation et l'extension de la cha\u00eene de l'industrie de l'argousier.<\/p>\n<p>&nbsp;<\/p>\n<p>Le m\u00e9canisme de l'effet synergique entre les ultrasons et les enzymes est que les ultrasons peuvent renforcer l'activit\u00e9 enzymatique et am\u00e9liorer le rendement des fibres alimentaires. Dans cette \u00e9tude, le processus optimal a \u00e9t\u00e9 obtenu par optimisation de la surface de r\u00e9ponse comme suit : ajout de 5% cellulase, temp\u00e9rature ultrasonique de 60 \u2103, puissance ultrasonique de 120W et dur\u00e9e ultrasonique de 42min. \u00c0 ce moment-l\u00e0, le rendement en SDF \u00e9tait de (16 \u00b1 1)%, le rendement en IDF \u00e9tait de (73 \u00b1 2)%, et le rapport SDF\/IDF \u00e9tait de 0,21 \u00b1 0,01. Dans les m\u00eames conditions de traitement, en utilisant les ultrasons seuls, le rendement en SDF est de (12 \u00b1 4)%, le rendement en IDF est de (65 \u00b1 1)%, et le rapport SDF\/IDF est de 0,18 \u00b1 0,08 ; Le rendement en SDF en utilisant la m\u00e9thode de la cellulose seule est de (11 \u00b1 1)%, le rendement en IDF est de (67 \u00b1 1)%, et le rapport SDF\/IDF est de 0,16 \u00b1 0,02. On peut constater que la m\u00e9thode enzymatique assist\u00e9e par ultrasons pour la pr\u00e9paration de fibres alimentaires \u00e0 partir de r\u00e9sidus de fruits d'argousier pr\u00e9sente un avantage significatif en termes de rendement et augmente la proportion de fibres alimentaires solubles.<br \/>\nLa fibre alimentaire totale du r\u00e9sidu du fruit de l'argousier pr\u00e9sente de bonnes propri\u00e9t\u00e9s d'application, notamment en termes de capacit\u00e9 de gonflement et de r\u00e9tention d'huile, qui sont respectivement de 3,12 \u00b1 0,13mL\/g et de (4,47 \u00b1 0,41)%. Il a \u00e9galement un bon effet d'adsorption sur le cholest\u00e9rol, l'adsorption du cholest\u00e9rol \u00e9tant presque deux fois plus \u00e9lev\u00e9e que celle du SDF \u00e0 un pH de 7.<br \/>\nEn r\u00e9sum\u00e9, l'utilisation des sous-produits de la transformation de l'argousier, tels que les r\u00e9sidus de fruits, permet de pr\u00e9parer efficacement diff\u00e9rents types de fibres alimentaires, d'am\u00e9liorer l'utilisation des ressources, de r\u00e9duire les co\u00fbts de l'industrie et d'obtenir des produits \u00e0 forte valeur ajout\u00e9e.
