Il s'agit d'une plante dicotyl\u00e9done originaire de Chine, l'une des premi\u00e8res cultures au monde. Il s'agit \u00e9galement d'une petite c\u00e9r\u00e9ale unique en Chine qui combine alimentation et m\u00e9decine. Selon le Compendium of Materia Medica, le sarrasin amer a un go\u00fbt amer, doux et froid, et a pour fonctions de r\u00e9duire le qi, d'\u00e9largir les intestins, de soutenir l'esprit, de favoriser la circulation du qi et d'\u00e9liminer la stase sanguine. Des \u00e9tudes ant\u00e9rieures ont montr\u00e9 que les extraits peptidiques bruts obtenus \u00e0 partir des grains de sarrasin amer et l'hydrolyse de leurs prot\u00e9ines ont diverses activit\u00e9s biologiques, telles que la r\u00e9duction du cholest\u00e9rol, la pr\u00e9vention du cancer et des tumeurs, la pr\u00e9vention de l'hyperlipid\u00e9mie et des effets antioxydants.<br \/>\nLes peptides bioactifs ont de multiples fonctions biologiques, qui sont \u00e9troitement li\u00e9es \u00e0 leur composition en acides amin\u00e9s et \u00e0 leur s\u00e9quence. Par cons\u00e9quent, la cl\u00e9 de l'\u00e9tude de l'efficacit\u00e9 des peptides est l'identification de leur structure. Le bouillon de fermentation de polypeptides de sarrasin tartare obtenu a \u00e9t\u00e9 purifi\u00e9 par r\u00e9sine d'adsorption macroporeuse, gel de dextran et chromatographie liquide, et son activit\u00e9 antioxydante a \u00e9t\u00e9 d\u00e9termin\u00e9e.
