{"id":6099,"date":"2024-08-05T17:10:44","date_gmt":"2024-08-05T17:10:44","guid":{"rendered":"https:\/\/longchangextracts.com\/?p=6099"},"modified":"2024-08-05T17:10:44","modified_gmt":"2024-08-05T17:10:44","slug":"natural-colors","status":"publish","type":"post","link":"https:\/\/longchangextracts.com\/fr\/natural-colors\/","title":{"rendered":"Quelle est la couleur de la coque de cacao des colorants naturels ?"},"content":{"rendered":"<p>Conform\u00e9ment \u00e0 la norme nationale GB 1886.30-2015 relative aux additifs alimentaires de s\u00e9curit\u00e9 pour la couleur de la coque de cacao, cette norme s'applique aux additifs alimentaires fabriqu\u00e9s \u00e0 partir de la coque de cacao en tant que mati\u00e8re premi\u00e8re, extraite d'une solution aqueuse, raffin\u00e9e, concentr\u00e9e et s\u00e9ch\u00e9e.<\/p>\n<p><strong>Additif alimentaire Caract\u00e9ristiques de la couleur de la coque de cacao<\/strong><\/p>\n<p>(1) \u00c9tat : poudre brun fonc\u00e9<br \/>\n(2) Solubilit\u00e9 : facilement soluble dans l'eau et dans une solution d'\u00e9thanol dilu\u00e9e, la solution aqueuse est de couleur chocolat.<br \/>\n(3) Acidit\u00e9 et alcalinit\u00e9 : stable dans des conditions proches de la neutralit\u00e9, facile \u00e0 pr\u00e9cipiter lorsque le pH est inf\u00e9rieur \u00e0 4,0 ; avec l'augmentation du pH moyen, la couleur de la solution s'approfondit, mais la teinte reste inchang\u00e9e.<br \/>\n(4) Stabilit\u00e9 : r\u00e9sistance \u00e0 la chaleur, \u00e0 la lumi\u00e8re et \u00e0 l'oxydation. Il est tr\u00e8s efficace pour colorer l'amidon et les prot\u00e9ines, en particulier pour colorer l'amidon, qui est beaucoup plus fort que le caramel.
