Les haricots aigres contiennent diff\u00e9rents types de substances structurelles telles que des flavono\u00efdes, des anthocyanes, des anthocyanes oligom\u00e9riques, des terp\u00e8nes, des polysaccharides et des acides organiques, qui ont des activit\u00e9s biologiques telles que l'antioxydation, l'anti-inflammation, l'antivieillissement et la r\u00e9duction de la pression art\u00e9rielle.<\/p>\n<p>Ces derni\u00e8res ann\u00e9es, les fleurs, les feuilles, les fruits et les graines de haricots verts ont fait l'objet d'un nombre croissant de recherches, tant au niveau national qu'international. Cependant, il existe actuellement peu de rapports sur la composition et l'activit\u00e9 de la peau ext\u00e9rieure des haricots aigres. Cependant, la peau ext\u00e9rieure des haricots aigres est souvent n\u00e9glig\u00e9e en tant que sous-produit de la transformation des aliments. Dans cette exp\u00e9rience, un total de 18 compos\u00e9s flavono\u00efdes ont \u00e9t\u00e9 isol\u00e9s de la peau ext\u00e9rieure des haricots verts, dont 6 flavono\u00efdes (1-5, 9), 2 flavonols (7, 8), 5 dihydroflavono\u00efdes (10-12, 14, 15), 2 dihydroflavonols (13, 16), 2 flavanols (17, 18), et un glycoside flavono\u00efde (6). Parmi eux, 10 compos\u00e9s (2, 4-6, 9, 11, 13-16) ont \u00e9t\u00e9 isol\u00e9s de ce genre de plantes pour la premi\u00e8re fois, ce qui indique que la peau ext\u00e9rieure des haricots aigres contient une grande quantit\u00e9 de flavono\u00efdes, ce qui est coh\u00e9rent avec la grande quantit\u00e9 de composants contenus dans les haricots aigres. Les r\u00e9sultats de l'exp\u00e9rience ORAC ont montr\u00e9 que l'extrait d'ac\u00e9tone, l'extrait de dichlorom\u00e9thane, l'extrait d'ac\u00e9tate d'\u00e9thyle, l'extrait de n-butanol et 9 compos\u00e9s (1, 2, 7-10, 12, 13, 17) de la peau ext\u00e9rieure des haricots verts avaient tous une bonne activit\u00e9 antioxydante in vitro.<br \/>\nL'activit\u00e9 antioxydante des flavono\u00efdes est \u00e9troitement li\u00e9e \u00e0 leur structure, et le nombre et la position des groupes hydroxyles, ainsi que la pr\u00e9sence de groupes carbonyles dans l'anneau C, ont tous un certain impact sur l'activit\u00e9 antioxydante des flavono\u00efdes. En raison de l'implication directe des groupes hydroxyles ph\u00e9noliques dans la capture des radicaux libres, la quantit\u00e9 de substitution des groupes hydroxyles ph\u00e9noliques joue un r\u00f4le important dans l'effet antioxydant des flavono\u00efdes. Les r\u00e9sultats exp\u00e9rimentaux ont montr\u00e9 que la valeur ORAC du dihydrokaempf\u00e9rol dans le type dihydroflavono\u00efde \u00e9tait plus \u00e9lev\u00e9e que celle de la naring\u00e9nine, et que la querc\u00e9tine \u00e9tait plus \u00e9lev\u00e9e que d'autres types de flavono\u00efdes tels que la lut\u00e9oline et le kaempf\u00e9rol. On constate que plus il y a de groupes hydroxyles, plus la capacit\u00e9 antioxydante du compos\u00e9 est \u00e9lev\u00e9e. La recherche a montr\u00e9 que le principal site de l'activit\u00e9 antioxydante des flavono\u00efdes est la substitution des groupes hydroxyle dans l'anneau B, le groupe hydroxyle ph\u00e9nolique adjacent \u00e0 l'anneau B ayant l'activit\u00e9 la plus forte. Ce ph\u00e9nom\u00e8ne peut \u00eatre d\u00fb au fait que le groupe hydroxyle ph\u00e9nolique adjacent sur l'anneau B est plus sensible \u00e0 l'attaque des \u00e9lectrons. Les r\u00e9sultats exp\u00e9rimentaux montrent que le nombre de groupes hydroxyles dans le magnolol et le kaempf\u00e9rol est le m\u00eame, mais que la valeur ORAC du magnolol est plus \u00e9lev\u00e9e. On suppose que le groupe hydroxyle de l'anneau B peut avoir une plus grande activit\u00e9 antioxydante que le groupe hydroxyle de l'anneau A, et que le groupe hydroxyle ph\u00e9nolique adjacent joue un r\u00f4le important ; les doubles liaisons sont des groupes qui retirent des \u00e9lectrons, et leur effet d'induction peut r\u00e9duire la capacit\u00e9 antioxydante des flavono\u00efdes. La pr\u00e9sence de doubles liaisons peut \u00e9galement prolonger le syst\u00e8me conjugu\u00e9 des flavono\u00efdes, renforcer la stabilit\u00e9 des produits radicalaires et am\u00e9liorer l'activit\u00e9 antioxydante. Les r\u00e9sultats exp\u00e9rimentaux ont montr\u00e9 que lorsque les substituants sont identiques, la valeur ORAC du dihydrokaempf\u00e9rol est sup\u00e9rieure \u00e0 celle du kaempf\u00e9rol, tandis que la valeur ORAC de la purpurine est sup\u00e9rieure \u00e0 celle de la 7,3 ', 4' - trihydroxyflavone. La valeur ORAC du dihydrokaempf\u00e9rol est significativement plus \u00e9lev\u00e9e que celle des cat\u00e9chines, ce qui indique que la pr\u00e9sence du groupe 4-carbonyle a un certain effet promoteur sur l'activit\u00e9 antioxydante.
