La recherche moderne a montr\u00e9 que les polysaccharides ont diverses fonctions telles que la r\u00e9gulation immunitaire, la lutte contre les tumeurs, l'anti-inflammation, les antiviraux, les antioxydants, la lutte contre les radiations, l'hypoglyc\u00e9mie, l'abaissement des taux de lipides et la protection du foie. Ces derni\u00e8res ann\u00e9es, diverses m\u00e9thodes de d\u00e9rivation des polysaccharides ont \u00e9t\u00e9 mises au point pour renforcer l'activit\u00e9 biologique et optimiser les propri\u00e9t\u00e9s physicochimiques des polysaccharides, telles que la sulfatation, l'ac\u00e9tylation, la carboxym\u00e9thylation et la phosphorylation. La sulfatation des polysaccharides peut am\u00e9liorer de mani\u00e8re significative leurs caract\u00e9ristiques structurelles et leur activit\u00e9 biologique, voire leur conf\u00e9rer de nouvelles activit\u00e9s biologiques. Yang et al. ont \u00e9tudi\u00e9 la sulfatation des polysaccharides de natto en utilisant la m\u00e9thode du chlorosulfate de pyridine, et l'activit\u00e9 antibact\u00e9rienne des polysaccharides de natto sulfat\u00e9s a \u00e9t\u00e9 am\u00e9lior\u00e9e. Plantago asiatica a pour effet d'arr\u00eater la diarrh\u00e9e, la diur\u00e8se, de soulager la douleur, de r\u00e9duire la chaleur, d'att\u00e9nuer les gonflements et d'\u00e9claircir la gorge. Il est principalement utilis\u00e9 pour traiter des maladies telles que la n\u00e9phrite, l'\u0153d\u00e8me, les infections du syst\u00e8me urinaire, les mictions fr\u00e9quentes, les mictions douloureuses, les mictions sanglantes et la diarrh\u00e9e. Les polysaccharides de Plantago asiatica ont une viscosit\u00e9 \u00e9lev\u00e9e, ce qui leur conf\u00e8re des fonctions physiologiques telles que l'humidification des intestins, la facilitation du transit intestinal et la promotion de la sant\u00e9 intestinale. Toutefois, cela entra\u00eene \u00e9galement des inconv\u00e9nients au niveau de la production, de la recherche et de l'application. Cette question a \u00e9t\u00e9 largement abord\u00e9e, mais les progr\u00e8s ont \u00e9t\u00e9 lents. Il est donc n\u00e9cessaire de mettre au point de nouvelles m\u00e9thodes pour r\u00e9duire efficacement la viscosit\u00e9 des polysaccharides de Plantago asiatica tout en garantissant leur faible co\u00fbt, leur int\u00e9grit\u00e9 structurelle et leur activit\u00e9, afin de promouvoir le d\u00e9veloppement et l'utilisation des polysaccharides de Plantago asiatica et d'am\u00e9liorer les avantages \u00e9conomiques. Jusqu'\u00e0 pr\u00e9sent, aucun rapport n'a \u00e9t\u00e9 publi\u00e9 sur la modification structurelle des polysaccharides de Plantago asiatica, leur activit\u00e9 biologique et leurs caract\u00e9ristiques structurelles.<br \/>\nC'est pourquoi cette \u00e9tude se concentre principalement sur les polysaccharides de Plantago asiatica en tant qu'objet de recherche. Des polysaccharides de Plantago asiatica \u00e0 faible viscosit\u00e9 ont \u00e9t\u00e9 pr\u00e9par\u00e9s par sulfatation, puis isol\u00e9s et purifi\u00e9s pour pr\u00e9parer des polysaccharides homog\u00e8nes. Les caract\u00e9ristiques structurelles ont fait l'objet d'une \u00e9tude pr\u00e9liminaire et leur activit\u00e9 antioxydante a \u00e9t\u00e9 \u00e9valu\u00e9e par des exp\u00e9riences antioxydantes in vitro. \u00c0 notre connaissance, il s'agit de la premi\u00e8re \u00e9tude sur la sulfatation des polysaccharides de Plantago asiatica pour r\u00e9duire la viscosit\u00e9.<\/p>\n<p><img polysaccharides de Plantago asiatica, la purification et la d\u00e9tection de l'activit\u00e9 ne sont pas possibles. Dans cette \u00e9tude, la sulfatation a \u00e9t\u00e9 utilis\u00e9e pour modifier les polysaccharides de Plantago asiatica var. asiatica (POFP), et la viscosit\u00e9 des polysaccharides modifi\u00e9s a \u00e9t\u00e9 consid\u00e9rablement r\u00e9duite. Deux polysaccharides homog\u00e8nes ont \u00e9t\u00e9 pr\u00e9par\u00e9s en s\u00e9parant et en purifiant le POFP-S. Le degr\u00e9 de substitution et la puret\u00e9 des polysaccharides modifi\u00e9s ont \u00e9t\u00e9 d\u00e9termin\u00e9s. Le degr\u00e9 de substitution et la puret\u00e9 des polysaccharides, de l'acide glucuronique et des groupes sulfates dans le POFP-S1 \u00e9taient respectivement de 38,96%, 2,91%, 0,364% et 94,20%. Le degr\u00e9 de substitution des polysaccharides, des acides uroniques et des groupes sulfates dans le POFP-S2 \u00e9tait de 52.55%, 3.68%, 1.080%, et 98.89%, respectivement, et aucune prot\u00e9ine n'a \u00e9t\u00e9 d\u00e9tect\u00e9e dans l'un ou l'autre des polysaccharides ; parmi eux, le POFP-S1 a un poids mol\u00e9culaire relativement \u00e9lev\u00e9 et des composants monosaccharides abondants. La spectroscopie UV et FT-IR a r\u00e9v\u00e9l\u00e9 que POFP-S1 et POFP-S2 pr\u00e9sentent des pics d'absorption caract\u00e9ristiques des polysaccharides sulfat\u00e9s, ce qui indique une modification par sulfatation r\u00e9ussie ; la diffraction des rayons X (XRD) et les exp\u00e9riences au rouge Congo ont r\u00e9v\u00e9l\u00e9 que POFP-S2 est un polysaccharide dot\u00e9 d'une structure h\u00e9lico\u00efdale unique qui coexiste \u00e0 la fois avec des phases cristallines et amorphes. En termes d'activit\u00e9 antioxydante, le polysaccharide POFP-S1 a une plus grande capacit\u00e9 \u00e0 pi\u00e9ger les radicaux DPPH et ABTS que le POFP-S2, ce qui peut \u00eatre li\u00e9 \u00e0 son poids mol\u00e9culaire plus \u00e9lev\u00e9 et \u00e0 sa composition monosaccharidique (glucose). Le POFP-S2 a une plus grande capacit\u00e9 \u00e0 pi\u00e9ger les radicaux hydroxyles, ce qui peut \u00eatre d\u00fb au degr\u00e9 plus \u00e9lev\u00e9 de substitution des groupes sulfates dans le polysaccharide POFP-S2.
