Les effets de la temp\u00e9rature \u00e9lev\u00e9e, de l'alcali fort, de la lumi\u00e8re et de la concentration \u00e9lev\u00e9e d'oxydants et d'agents r\u00e9ducteurs sur l'effet inhibiteur du BBPP sur l'activit\u00e9 de l'alpha-amylase ont \u00e9galement \u00e9t\u00e9 \u00e9tudi\u00e9s. Cette exp\u00e9rience peut fournir une base th\u00e9orique pour l'utilisation compl\u00e8te du pollen d'abeille de sarrasin et le d\u00e9veloppement de m\u00e9dicaments hypoglyc\u00e9miques naturels et de formulations compos\u00e9es d'inhibiteurs d'alpha-amylase.<br \/>\nCette exp\u00e9rience a utilis\u00e9 diverses analyses spectroscopiques et la cin\u00e9tique d'inhibition pour \u00e9tudier le m\u00e9canisme d'inhibition du BBPP sur l'alpha-amylase. Les r\u00e9sultats ont montr\u00e9 que le BBPP pr\u00e9sentait un effet inhibiteur comp\u00e9titif mixte fort et r\u00e9versible sur l'alpha-amylase, et que son efficacit\u00e9 inhibitrice d\u00e9pendait de la dose, avec une IC50 de 2,00 \u00b1 0,06 mg\/ml. L'analyse de la stabilit\u00e9 du BBPP dans diff\u00e9rentes conditions a montr\u00e9 que la temp\u00e9rature \u00e9lev\u00e9e, l'alcali fort, la lumi\u00e8re et les fortes concentrations d'oxydants et d'agents r\u00e9ducteurs pouvaient tous r\u00e9duire l'effet inhibiteur du BBPP sur l'alpha-amylase. L'analyse de l'extinction du spectre de fluorescence montre que le BBPP pr\u00e9sente une extinction statique \u00e0 273-298K et une extinction dynamique \u00e0 298-310K, avec un seul site de liaison entre les deux. La spectroscopie de fluorescence synchrone indique que le BBPP provoque des changements de pliage dans l'environnement des r\u00e9sidus tyrosine de l'\u03b1-amylase et augmente l'hydrophobicit\u00e9.
