Une suppl\u00e9mentation ad\u00e9quate en certains antioxydants exog\u00e8nes est une garantie de pouvoir maintenir un \u00e9tat de sant\u00e9 sur une base r\u00e9guli\u00e8re. Outre ses effets antioxydants, la vitamine C est \u00e9galement connue pour favoriser la croissance et le d\u00e9veloppement, renforcer l'immunit\u00e9, favoriser l'absorption du fer et pr\u00e9venir les rhumes et les grippes chez les personnes qui vivent en plein air.<br \/>\nLes cerises d'Ac\u00e9rola, commun\u00e9ment appel\u00e9es cerises des Antilles, sont riches en vitamine C, dont la fraction massique atteint 1 215 \u00e0 3 024 mg\/kg, ce qui en fait une excellente source naturelle de vitamine C.<br \/>\nSur le march\u00e9 chinois des produits laitiers, il est rare de voir des yaourts enrichis en vitamine C. Cela peut \u00eatre d\u00fb \u00e0 la plus grande perm\u00e9abilit\u00e9 \u00e0 l'oxyg\u00e8ne des sacs en film noir et blanc, qui inactive facilement la vitamine C par oxydation.<br \/>\nEffet de diff\u00e9rentes temp\u00e9ratures de stockage sur la vitamine C dans le yaourt<br \/>\nAfin de v\u00e9rifier l'effet de la temp\u00e9rature sur la stabilit\u00e9 de la vitamine C, le yaourt post-cuit a \u00e9t\u00e9 divis\u00e9 en bouteilles PE et plac\u00e9 dans des conditions de 2-6\u2103 et de temp\u00e9rature ambiante (20-30\u2103) pour la d\u00e9termination de la fraction de masse de la vitamine C, et les r\u00e9sultats sont pr\u00e9sent\u00e9s dans le tableau 2.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10258\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21.png\" alt=\"\" width=\"514\" height=\"231\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21.png 514w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21-18x8.png 18w\" sizes=\"(max-width: 514px) 100vw, 514px\" \/><\/p>\n<p>Comme le montre le tableau 2, la perte de vitamine C dans le yaourt \u00e0 basse temp\u00e9rature (de 2 \u00e0 6\u00b0C) \u00e9tait inf\u00e9rieure \u00e0 15,38%, et dans les conditions ambiantes, la perte de vitamine C s'\u00e9levait \u00e0 84,25%, ce qui indique que les conditions ambiantes (20-30\u00b0C) ont un effet plus important sur la stabilit\u00e9 de la vitamine C. Stabilit\u00e9 de la vitamine C dans le yaourt \u00e0 dur\u00e9e de vie limit\u00e9e<br \/>\nLe yaourt a \u00e9t\u00e9 distribu\u00e9 dans des bouteilles en PE et plac\u00e9 dans un r\u00e9frig\u00e9rateur \u00e0 2~6\u00b0C pendant 21 jours. La fraction de masse de vitamine C a \u00e9t\u00e9 examin\u00e9e tous les 3 jours, et les r\u00e9sultats sont pr\u00e9sent\u00e9s dans la Fig. 1.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10259\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13.png\" alt=\"\" width=\"397\" height=\"284\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13.png 397w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13-18x12.png 18w\" sizes=\"(max-width: 397px) 100vw, 397px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>Comme le montre la figure 1, la teneur en vitamine C du yaourt diminue avec l'augmentation du temps de stockage, et la perte de vitamine C \u00e9tait de 18,25% au 21e jour.<br \/>\nSynth\u00e8se<\/p>\n<p>L'\u00e9tude a montr\u00e9 que la perte de vitamine C dans le yaourt avec de la poudre de cerise ac\u00e9rola pendant la dur\u00e9e de conservation \u00e9tait de 18,25%. La meilleure stabilit\u00e9 de la vitamine C a \u00e9t\u00e9 observ\u00e9e dans le yaourt conditionn\u00e9 dans des bouteilles en verre et en PE, avec un taux de perte de 7,69% et 15,38%, respectivement, et dans un film noir et blanc, avec un taux de perte de 30,77%.<br \/>\nLa temp\u00e9rature de stockage a un impact plus important sur la stabilit\u00e9 de la vitamine C. Le taux de perte de la vitamine C atteint 84,25% \u00e0 temp\u00e9rature ambiante, et la couleur change.<br \/>\nPar cons\u00e9quent, lors du d\u00e9veloppement de yaourts contenant de la vitamine C, il convient d'envisager des formes d'emballage moins perm\u00e9ables \u00e0 l'oxyg\u00e8ne, telles que les bouteilles en verre et en PE.
