Glycerol is the common name of propanetriol, molecular formula: C3H8O3, molecular weight: 92.09, CAS No.: 56-81-5, is a colorless transparent viscous liquid. Boiling point 290 ℃ (decomposition), relative density 1.26362 (20/20 ℃), refractive index 1.4746, viscosity (20 ℃) 1499mPa – s. Glycerol can be mixed with water and ethanol.

Glycerol can be miscible with water and ethanol, aqueous solution is neutral. Glycerol can absorb moisture from the air and has no odor. In nature, glycerol mainly exists widely in plants and animals in the form of glycerol ester. Food grade glycerin is a sweetener and humectant usually used in food processing industry, which gives food smooth and delicious and better sensory.

Specific uses of food grade glycerin

1、Application in bread, cake, etc.
Food grade glycerin is used in bread, cake, etc. for water retention humectant, strong moisture absorption, to maintain the fluffy texture, to extend the shelf life. It can be used in such enterprises as Pan Pan, Hsu Fu Chi and so on. It is recommended to add about 5-8%.

2、Application in gum-based candy
Mainly including chewing gum and bubble gum two categories, basically sugar (or sugar alcohols), syrup, gum base, glycerol, flavors, colors and other components. Glycerin as candy softener, emulsifier, etc.. It is recommended to add 0.8-2%.

3, fruit juice, fruit vinegar and other beverages in the application of
Fruits contain tannin, which is the source of bitter and astringent odor in fruits. Glycerin also has the special effect of antioxidant and moisturizing, so it can lock the water that should be in the finished preserved fruits, and can effectively prolong the shelf life. The application method of fruit cake is the same.

6、Application in jerky, sausage and bacon industry

Adding 3% of food-grade glycerin can make the product water activity Aw<0.7, while the moisture content is controlled at 20%, the product organization is soft and the tenderness is improved.

In processing and production, the glycerin is diluted with pure grain wine above 50 degrees, evenly sprayed on the meat or cut meat, fully rubbed or stirred. It plays the role of water locking, moisturizing, to achieve the effect of weight gain, to extend the shelf life, and to improve the product taste, color and aroma. Recommended additive amount 1.2-3%.

Specific use method I. Used as solvent, moisture absorber and color carrier in food industry. In flavoring and coloring food, glycerin helps food molding because of its viscosity. In the rapid freezing of food, glycerol can be used as a heat transfer medium in direct contact with food. Glycerin is also used as a lubricant in food processing and packaging machinery. Glycerin is used as a wetting agent in tobacco (mainly cigar tobacco) to keep the tobacco moist, prevent brittleness and add sweetness to the tobacco.
