A continuaci\u00f3n se describen los distintos tipos de harina de trigo seg\u00fan su valor de cenizas y sus requisitos de tosquedad.<\/p>\n<p>La ceniza de harina de trigo es el peso del residuo de harina despu\u00e9s de la quema a alta temperatura como porcentaje del peso de la harina antes de la quema, es un par\u00e1metro que describe la precisi\u00f3n de la harina, en general, la alta calidad del valor de la ceniza de harina es baja, y viceversa, harina gruesa, harina de trigo integral y otra precisi\u00f3n de procesamiento del valor de la ceniza de harina es alta.<\/p>\n<p>La tosquedad y la finura de la harina indican el grado de molienda durante el procesamiento del trigo. En las normas nacionales e industriales, el valor de cenizas y los requisitos de tosquedad de diversos tipos de harina son los siguientes:<\/p>\n<p><strong>Harina de trigo<\/strong><\/p>\n<p><strong>1.Harina especial de primera clase<\/strong><\/p>\n<p>Ceniza \u2264 0,70, todos los gruesos y finos pasan el tamiz del n\u00ba CB36, y no quedan m\u00e1s de 10% en el tamiz del n\u00ba CB42;<\/p>\n<p><strong>2. Harina especial de segunda clase<\/strong><\/p>\n<p>Ceniza \u2264 0,85, todo el grado grueso y fino a trav\u00e9s del tamiz CB30, sin dejar m\u00e1s de 10% en el tamiz CB36;<\/p>\n<p><strong>3.Polvo est\u00e1ndar<\/strong><\/p>\n<p>Ceniza \u2264 1,10, grado grueso y fino de todos a trav\u00e9s del tamiz CQ20, retenido en el tamiz CB30 no m\u00e1s de 20%;<\/p>\n<p><strong>4. Polvo ordinario<\/strong><\/p>\n<p>Ceniza \u2264 1,40, grado grueso y fino de todos a trav\u00e9s del tamiz CQ20.<\/p>\n<p><strong>Harina de trigo con alto contenido en gluten<\/strong><\/p>\n<p><strong>1. Harina de trigo de gluten fuerte<\/strong><\/p>\n<p>Primer grado ceniza\u22640,6, segundo grado ceniza\u22640,70, tercer grado ceniza\u22640,85.<\/p>\n<p>La granulometr\u00eda y la finura pasan todas por el tamiz CB30, y no queda m\u00e1s de 10% en el tamiz CB36.<\/p>\n<p><strong>2.Harina de trigo de gluten medio fuerte<\/strong><\/p>\n<p>Ceniza de grado 1\u22640,55, ceniza de grado 2\u22640,70, ceniza de grado 3\u22640,85, ceniza de grado 4\u22641,10.<\/p>\n<p>Granulometr\u00eda y finura de todo a trav\u00e9s del tamiz CB30, retenci\u00f3n del tamiz CB36 retenci\u00f3n no superior a 10%.<\/p>\n<p><strong>3.Harina de trigo de gluten medio<\/strong><\/p>\n<p>Ceniza de grado 1 \u2264 0,55, ceniza de grado 2 \u2264 0,70, ceniza de grado 3 \u2264 0,85, ceniza de grado 4 \u2264 1,10.<\/p>\n<p>Granulometr\u00eda y finura de todo a trav\u00e9s del tamiz CB30, retenci\u00f3n del tamiz CB36 retenci\u00f3n no superior a 10%.<\/p>\n<p><strong>4.Trigo de gluten d\u00e9bil<\/strong><\/p>\n<p>Ceniza de grado 1 \u2264 0,55, ceniza de grado 2 \u2264 0,65, ceniza de grado 3 \u2264 0,75.<\/p>\n<p>La granulometr\u00eda y finura de todo el material a trav\u00e9s del tamiz CB30, retenido en el tamiz CB36 no supera 10%.<\/p>\n<p><strong>Harina de trigo especializada<\/strong><\/p>\n<p><strong>1.Harina de pan<\/strong><\/p>\n<p>Cenizas de grado refinado \u2264 0,60, cenizas de grado com\u00fan \u2264 0,75, gruesas y finas todas a trav\u00e9s del tamiz CB30, sin dejar m\u00e1s de 15,0% del material en el tamiz CB36.<\/p>\n<p><strong>2.Harina de fideos<\/strong><\/p>\n<p>Cenizas de grado refinado \u2264 0,55, cenizas de grado com\u00fan \u2264 0,70, gruesas y finas todas a trav\u00e9s del tamiz CB30, tamiz CB36 retenido no m\u00e1s de 10,0%.<\/p>\n<p><strong>3.Polvo de alb\u00f3ndigas<\/strong><\/p>\n<p>Cenizas de grado refinado \u2264 0,55, cenizas de grado com\u00fan \u2264 0,70, gruesas y finas todas a trav\u00e9s del tamiz CB30, tamiz CB36 retenido no supera 10,0%.<\/p>\n<p><strong>4.
