{"id":9218,"date":"2024-08-23T07:02:40","date_gmt":"2024-08-23T07:02:40","guid":{"rendered":"https:\/\/longchangextracts.com\/?p=9218"},"modified":"2024-08-23T07:02:40","modified_gmt":"2024-08-23T07:02:40","slug":"3-functional-sweeteners","status":"publish","type":"post","link":"https:\/\/longchangextracts.com\/es\/3-edulcorantes-funcionales\/","title":{"rendered":"\u00bfC\u00f3mo mejoran 3 edulcorantes funcionales la absorci\u00f3n de agua y la textura del arroz en remojo?"},"content":{"rendered":"<p>Tras el remojo, el arroz absorbe agua y se expande, lo que favorece la absorci\u00f3n de agua por el almid\u00f3n interno y el pegado homog\u00e9neo del almid\u00f3n de arroz en el proceso de cocci\u00f3n, acortando as\u00ed el tiempo de cocci\u00f3n. <strong>Cuanto mayor sea el \u00edndice de absorci\u00f3n de agua del arroz tras el remojo, mayor ser\u00e1 la calidad comestible del arroz tras la cocci\u00f3n.<\/strong><\/p>\n<p>El arroz se sumergi\u00f3 en diferentes fracciones de masa de soluciones de oligofructosa, sorbitol y maltitol, respectivamente, y en la Fig. 1 se observa que <strong>la adici\u00f3n de los tres edulcorantes consigui\u00f3 aumentar la tasa de absorci\u00f3n de agua del arroz en comparaci\u00f3n con el grupo de control.<\/strong><\/p>\n<p>Con un tiempo de remojo de 5 min, la absorci\u00f3n de agua del arroz aument\u00f3 significativamente (P &lt; 0,05) en 41,23% y 34,93% con los tratamientos de oligofructosa 1,6% y sorbitol 0,4%, respectivamente.<\/p>\n<p>Entre ellos, la absorci\u00f3n de agua del arroz bajo los tratamientos de oligofructosa 1,6%, sorbitol 0,4% y maltitol 1,6% aument\u00f3 significativamente en 11,18%, 13,16% y 12,94%, respectivamente, en comparaci\u00f3n con el grupo de control al tiempo de remojo de 25 min, y la tasa de absorci\u00f3n de agua se nivel\u00f3 despu\u00e9s de 25 min de tiempo de remojo.<\/p>\n<p>El alcohol de az\u00facar se obtiene sustituyendo el grupo aldeh\u00eddo por un grupo hidroxilo, y la estructura multihidroxilo le confiere la capacidad de combinarse con el agua y tiene un cierto grado de absorci\u00f3n de agua.
