La acidez valorable del suero de mantequilla se consigue elevando el pH de la muestra de leche analizada hasta aproximadamente un pH de 8,4 utilizando una soluci\u00f3n alcalina de concentraci\u00f3n conocida, normalmente con fenolftale\u00edna como indicador, que cambia de color de incoloro a rosa.
