Adem\u00e1s de sus efectos antioxidantes, tambi\u00e9n se sabe que la vitamina C favorece el crecimiento y el desarrollo, mejora la inmunidad, favorece la absorci\u00f3n del hierro y previene los resfriados y la gripe en las personas que viven al aire libre.<br \/>\nLas cerezas acerola, com\u00fanmente conocidas como cerezas de las Indias Occidentales, son ricas en vitamina C, cuya fracci\u00f3n m\u00e1sica alcanza entre 1.215 y 3.024 mg\/kg, lo que las convierte en una excelente fuente natural de vitamina C.<br \/>\nEn el mercado l\u00e1cteo chino, es raro ver yogures enriquecidos con vitamina C. La sacarosa a\u00f1adida al yogur para neutralizar el sabor \u00e1cido tiene un efecto protector sobre la vitamina C. Adem\u00e1s, cuanto m\u00e1s bajo es el pH, m\u00e1s estable es la vitamina C.<br \/>\nEste art\u00edculo investiga la estabilidad de la vitamina C de las cerezas acerola en el yogur con el objetivo de aportar ideas para el desarrollo de productos enriquecidos con nutrientes y con un etiquetado limpio.<br \/>\nEfecto de diferentes formas de envasado sobre la vitamina C en el yogur<br \/>\nDebido a las diferentes tasas de transmisi\u00f3n de ox\u00edgeno y luz de las tres formas de envasado, el yogur postcocido se dividi\u00f3 en diferentes formas de envasado y se almacen\u00f3 a la luz a una temperatura baja de 2\uff5e6\u2103 durante 2O d\u00edas para la determinaci\u00f3n del contenido de vitamina C, y los resultados se muestran en la Tabla 1:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10257\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/1-38.png\" alt=\"\" width=\"532\" height=\"229\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/1-38.png 532w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/1-38-18x8.png 18w\" sizes=\"(max-width: 532px) 100vw, 532px\" \/><\/p>\n<p>Como puede observarse en la Tabla 1, la p\u00e9rdida de contenido de vitamina C en las botellas de vidrio y PE fue peque\u00f1a, mientras que la p\u00e9rdida de vitamina C en las bolsas de film blanco y negro alcanz\u00f3 los 30,77%. Puede deberse a la mayor permeabilidad al ox\u00edgeno de las bolsas de film blanco y negro que la vitamina C se inactiva f\u00e1cilmente por oxidaci\u00f3n.<br \/>\nEfecto de diferentes temperaturas de almacenamiento sobre la vitamina C en el yogur<br \/>\nPara verificar el efecto de la temperatura en la estabilidad de la vitamina C, el yogur postcocido se dividi\u00f3 en botellas de PE y se coloc\u00f3 en condiciones de 2-6\u2103 y temperatura ambiente (20-30\u2103) para la determinaci\u00f3n de la fracci\u00f3n de masa de vitamina C, y los resultados se muestran en la Tabla 2.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10258\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21.png\" alt=\"\" width=\"514\" height=\"231\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21.png 514w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-21-18x8.png 18w\" sizes=\"(max-width: 514px) 100vw, 514px\" \/><\/p>\n<p>Como puede verse en la Tabla 2, la p\u00e9rdida de vitamina C en el yogur en condiciones de baja temperatura de 2 a 6\u00b0C fue menor 15,38%, y en condiciones ambientales, la p\u00e9rdida de vitamina C ascendi\u00f3 a 84,25%, lo que indica que las condiciones ambientales (20-30\u00b0C ) tienen un mayor efecto sobre la estabilidad de la vitamina C. Estabilidad de la vitamina C en el yogur de conservaci\u00f3n<br \/>\nEl yogur se dispens\u00f3 en botellas de PE y se coloc\u00f3 en un frigor\u00edfico a 2~6\u00b0C durante 21 d. La fracci\u00f3n de masa de vitamina C se examin\u00f3 cada 3 d\u00edas, y los resultados se muestran en la Fig. 1.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10259\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13.png\" alt=\"\" width=\"397\" height=\"284\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13.png 397w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-13-18x12.png 18w\" sizes=\"(max-width: 397px) 100vw, 397px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>Como puede observarse en la Fig. 1, el contenido de vitamina C del yogur disminuye con el aumento del tiempo de almacenamiento, y la p\u00e9rdida de vitamina C fue de 18,25% el d\u00eda 21.<br \/>\nResumen<\/p>\n<p>El estudio mostr\u00f3 que la p\u00e9rdida de vitamina C en el yogur con polvo de cereza acerola durante la vida \u00fatil fue de 18,25%. La mejor estabilidad de la vitamina C se encontr\u00f3 en el yogur envasado en botellas de vidrio y PE, con una tasa de p\u00e9rdida de 7,69% y 15,38%, respectivamente, y en film blanco y negro, con una tasa de p\u00e9rdida de 30,77%.<br \/>\nLa temperatura de almacenamiento tiene un mayor impacto en la estabilidad de la vitamina C. La tasa de p\u00e9rdida de vitamina C alcanza 84,25% a temperatura ambiente, y el color cambia.<br \/>\nPor tanto, a la hora de elaborar yogures que contengan vitamina C, deben considerarse formas de envasado con menor permeabilidad al ox\u00edgeno, como botellas de vidrio y PE.
