Kamelblut hat einen hohen Proteingehalt mit einem Gesamtproteingehalt von 6,80 g\/dL und einem H\u00e4moglobingehalt von 141,11 g\/L, der h\u00f6her ist als der anderer Nutztiere. In dieser Studie wurde das Verfahren zur Herstellung von die Pankreaslipase hemmenden Peptiden aus Kamelblut durch neutrale Protease-Hydrolyse auf der Grundlage der die Pankreaslipase hemmenden Aktivit\u00e4t durch Einzelfaktor- und Response-Surface-Experimente optimiert. Unter optimalen Bedingungen betrug die Pankreaslipase-Hemmungsrate des Kamelblutpeptids 42,13%. Durch die Analyse der enzymatischen Hydrolyseprodukte mittels MALDI-TOF-MS, LC-MS und Bioinformatik wurden drei Peptidsegmente, ALERMFLGF, GQPAVPVRF und WDPSKVPPR, als signifikant bindend f\u00fcr Pankreaslipase identifiziert. Durch Molekulardynamiksimulationen wurde festgestellt, dass die drei Peptidsegmente haupts\u00e4chlich an die Aminos\u00e4urereste der aktiven PL-Stelle durch Wasserstoffbr\u00fcckenbindungen und hydrophobe Wechselwirkungen binden, die Funktion des N-terminalen Dom\u00e4nenventils der Pankreaslipase st\u00f6ren und ihre Aktivit\u00e4t hemmen. GQPAVPVRF hat eine hohe freie Bindungsenergie und eine gro\u00dfe Anzahl von Wasserstoffbr\u00fcckenbindungen innerhalb von 100 ns, was bedeutet, dass es sich eng an 1ETH binden kann und voraussichtlich ein Bestandteil von Pankreaslipase-Inhibitoren werden wird. Die Forschungsergebnisse zeigen, dass Kamelblutprotein als Quelle f\u00fcr Pankreaslipase hemmende Peptide dienen kann. Die Ergebnisse des virtuellen Screenings weisen jedoch gewisse Einschr\u00e4nkungen auf, und in Zukunft m\u00fcssen die Wasserl\u00f6slichkeit und die Verdauungsstabilit\u00e4t der Peptidsegmente optimiert werden.
