Fedme, metabolisk syndrom, de tre h\u00f8je (type 2-diabetes, hypertension, h\u00f8jt blodtryk, h\u00f8jt kolesterol i blodet) og andre sygdomme er alle relateret til sukker! Nu er drikkevaren \"lavt sukkerindhold\", \"sukkerfri\" ikke l\u00e6ngere en overfl\u00f8dig markedsf\u00f8ringsgimmick, det er ikke l\u00e6ngere en forretning at give forbrugerne alternative muligheder, men er blevet den globale drikkevareindustris irreversible tendens.<br \/>\n\"Sukkerreduktion\" er ikke bare et sp\u00f8rgsm\u00e5l om at putte mindre sukker i, men ogs\u00e5 om at reducere sukkeret uden at reducere s\u00f8dmen, hvilket er n\u00f8glen til teknologien, og artiklen af Anne S. Bertelsen et al. i Food Quality and Preference (IF=4.842, Zone 1) kan have givet nye ideer.<br \/>\nKrydsmodale effekter af vaniljearoma p\u00e5 s\u00f8dme af forskellige s\u00f8destoffer blandt kinesiske og danske forbrugereFood Quality and Preference, Region 1<br \/>\nBaggrund<br \/>\nOverdreven indtagelse af sukker og sukkerholdige drikkevarer bidrager til epidemien af fedme og relaterede sygdomme. Ikke-n\u00e6ringsrige s\u00f8destoffer har l\u00e6nge v\u00e6ret brugt af f\u00f8devare- og drikkevareindustrien til at reducere sukkerindholdet, men de indeholder ofte bismag. Aromaer har vist sig at v\u00e6re potentielle s\u00f8dmeforst\u00e6rkere, men forbedring af s\u00f8dme gennem aroma vil kun resultere i en lille reduktion af sukker i produktet. Derfor kan en kombination af begge strategier v\u00e6re den bedste l\u00f8sning til at reducere sukkerindholdet i f\u00f8devarer og drikkevarer.<br \/>\nDesuden kan brugen af aroma til at \u00f8ge s\u00f8dmen ogs\u00e5 afh\u00e6nge af kultur. Derfor var form\u00e5let med denne artikel at unders\u00f8ge, hvordan forskellige s\u00f8destoffer og nationaliteter p\u00e5virker den tv\u00e6rmodale effekt af vaniljearoma p\u00e5 s\u00f8dmeintensiteten ved at v\u00e6lge tre grupper af s\u00f8destoffer: saccharose, saccharose + D-tagatose og D-tagatose + glykosid steviosid (med et s\u00f8dmeniveau svarende til 2,5% w\/w saccharose) samt to nationaliteter: kinesisk og dansk.<br \/>\nUnders\u00f8gelsens indhold<br \/>\nI. Deskriptive analyser blev udf\u00f8rt i det sensoriske laboratorium p\u00e5 Institut for F\u00f8devarevidenskab, Aarhus Universitet, Danmark, af et tr\u00e6net sensorisk panel best\u00e5ende af syv kvinder og en mand (26-60 \u00e5r). Panelet vurderede alle pr\u00f8ver i r\u00e6kkef\u00f8lgen vaniljearoma (pr\u00e6nasal sniff), s\u00f8dme, vaniljesmag (postnasal sniff), lakridssmag, t\u00f8r mundf\u00f8lelse og lakridseftersmag (tre grupper af s\u00f8destoffer blev testet i rent, naturligt mineralvand med eller uden vaniljesmag), og intensiteten af hver egenskab blev vurderet p\u00e5 en 15 cm line\u00e6r skala (lav = 1,5, h\u00f8j = 13,5).<br \/>\nFor det andet blev der gennemf\u00f8rt forbrugerunders\u00f8gelser p\u00e5 Tianjin Institute of Industrial Biotechnology i Kina og p\u00e5 Aarhus Universitet i Danmark. Forbrugerne blev rekrutteret blandt ansatte og studerende, herunder 159 kinesiske forbrugere (18-30 \u00e5r, hvoraf 108 var kvinder) og 161 danske forbrugere (20-30 \u00e5r, hvoraf 85 var kvinder).<br \/>\nHver forbruger gav seks pr\u00f8ver (tre s\u00e6t s\u00f8destoffer testet i helt naturligt mineralvand med eller uden vaniljesmag) og et mundskyllevand, og hver pr\u00f8ve blev vurderet for s\u00f8d aroma-intensitet, s\u00f8dme-intensitet, accept af s\u00f8dme og samlet pr\u00e6ference. Intensitetsattributterne og den overordnede pr\u00e6ference blev m\u00e5lt p\u00e5 en 9-punktsskala.<br \/>\nResultater af unders\u00f8gelsen<br \/>\nResultaterne i tabel 1 viser, at tils\u00e6tning af vaniljearoma \u00f8gede intensiteten af vaniljearoma og vaniljesmag betydeligt. Der var ingen signifikante forskelle i s\u00f8dmeintensitet mellem s\u00f8destoffer med eller uden tils\u00e6tning af vaniljearoma, mens typen af s\u00f8destof p\u00e5virkede lakridssmagen og eftersmagen samt den t\u00f8rre mundfornemmelse. Interessant nok viste det sig, at der var en signifikant interaktion mellem s\u00f8destof og vaniljearoma, som p\u00e5virkede vurderingen af s\u00f8dmeintensiteten (tabel 1 og figur 1).<br \/>\nVaniljearoma \u00f8gede s\u00f8dmeintensiteten markant for saccharose og saccharose + D-tagose, men ikke for D-tagose + A-glykosidstevia. S\u00f8destoffer havde ogs\u00e5 en signifikant effekt p\u00e5 den samlede pr\u00e6ference for pr\u00f8verne, idet forbrugere i forskellige lande ikke kunne lide pr\u00f8ver, der indeholdt D-tagatose + A-glycosidstevia, mere end b\u00e5de saccharose og saccharose + D-tagatose, og pr\u00e6ferencen for s\u00f8destoffer var ikke relateret til tils\u00e6tning af aroma.<br \/>\nTabel 1 Gennemsnit \u00b1 standardafvigelse og p-v\u00e6rdier for hver designfaktor og egenskab i den deskriptive analyse. s = Saccharose, ST = Saccharose + D-Tagose, TR = D-Tagose + A Glycosid Stevia, SV = Saccharose + Vaniljearoma, STV = Saccharose + D-Tagose + Vaniljearoma, TRV = D-Tagose + A Glycosid Stevia + Vaniljearoma.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9977\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/1-2-650x237.jpg\" alt=\"\" width=\"650\" height=\"237\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9976\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-490x433.jpg\" alt=\"\" width=\"490\" height=\"433\" \/><\/p>\n<p>Figur 1 A) Score for s\u00f8dmeintensitet p\u00e5 tv\u00e6rs af s\u00f8destoffer og aromaer B) Samlet pr\u00e6ferencescore p\u00e5 tv\u00e6rs af s\u00f8destoffer<br \/>\nNationalitet og k\u00f8n p\u00e5virkede i h\u00f8j grad den samlede tv\u00e6rmodale effekt af vaniljearoma p\u00e5 s\u00f8dmeintensiteten, idet danske forbrugere havde en h\u00f8jere samlet tv\u00e6rmodal effekt end kinesiske forbrugere, og kvinder havde en lidt h\u00f8jere samlet tv\u00e6rmodal effekt end m\u00e6nd.<br \/>\nSignifikante interaktioner mellem nationalitet og aroma p\u00e5virkede graden af s\u00f8d aroma, s\u00f8dmeintensitet og den generelle smag af pr\u00f8verne. For pr\u00f8ver uden tilsat aroma havde nationalitet ingen effekt p\u00e5 vurderingen af s\u00f8d aroma og s\u00f8dmeintensitet.<br \/>\nDen s\u00f8de aroma steg, n\u00e5r der blev tilsat aroma, og interessant nok vurderede danske forbrugere intensiteten af den s\u00f8de aroma med vanilje i pr\u00f8verne betydeligt h\u00f8jere end kinesiske forbrugere; forbrugere fra begge lande opfattede tils\u00e6tningen af aroma som en h\u00f8jere s\u00f8dmeintensitet, mens danske forbrugere vurderede s\u00f8dmeintensiteten h\u00f8jere end kinesiske forbrugere.<br \/>\nKinesiske forbrugere vurderede typisk deres pr\u00e6ference for pr\u00f8ver i n\u00e6rheden af det neutrale punkt p\u00e5 skalaen, uafh\u00e6ngigt af om der var tilsat vaniljearoma eller ej, mens danske forbrugere vurderede deres pr\u00e6ference for pr\u00f8ver betydeligt lavere end kinesiske forbrugere og vurderede pr\u00f8ver med tilsat vaniljearoma lavere.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9978\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/3-495x433.jpg\" alt=\"\" width=\"495\" height=\"433\" \/><\/p>\n<p>Fig. 2 Forbrugere af forskellige nationaliteter vurderer intensiteten af s\u00f8dme og aroma (A) ved tilstedev\u00e6relse\/frav\u00e6r af aroma. Intensitet af s\u00f8dmearoma (B) og samlede pr\u00e6ferencevurderinger<br \/>\nKonklusion p\u00e5 unders\u00f8gelsen.<br \/>\nVaniljearoma havde en st\u00e6rkere tv\u00e6rmodal effekt p\u00e5 s\u00f8dmen af saccharose og saccharose + D-tagatose end D-tagatose + A-glykosidstevia, s\u00e5 D-tagatose ser ud til at v\u00e6re et potentielt s\u00f8destof, der kan bruges i kombination med den tv\u00e6rmodale effekt af vaniljearoma til at hj\u00e6lpe med at reducere sukkerindholdet.<br \/>\nDerudover viste danske forbrugere en st\u00f8rre stigning i s\u00f8dmeintensiteten sammenlignet med kinesiske forbrugere, hvilket kan skyldes forskellig associativ l\u00e6ring som f\u00f8lge af forskellige spisevaner mellem de to lande. Det er vigtigt at bem\u00e6rke, at cirka halvdelen af forbrugerne oplevede en tv\u00e6rmodal effekt af vaniljearoma p\u00e5 s\u00f8dmeintensiteten uden et fald i acceptabiliteten. Derfor er det muligt for de fleste forbrugere at bruge vaniljearoma til at reducere sukkerforbruget.<br \/>\nSukkerreduktion er aldrig en proces, der kan gennemf\u00f8res fra den ene dag til den anden. Selvom forbrugerne i dag gradvist har indset, at for meget sukker kan skade deres kropsfunktioner, er der stadig mange mennesker, der har sv\u00e6rt ved at modst\u00e5 fristelsen til f\u00f8devarer med h\u00f8jt sukkerindhold.
