Og de grundl\u00e6ggende oplysninger, processen, kvaliteten og anvendelsesomr\u00e5det for Tagatose forklares som f\u00f8lger:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9923\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/1-534x433.jpg\" alt=\"\" width=\"534\" height=\"433\" \/><\/p>\n<p>Introduktion af Tagatose<\/p>\n<p>Tagatose er den differentierede isomer af fruktose, og den industrielle produktion fremstilles hovedsageligt af galaktose gennem isomerisering, affarvning, afsaltning, koncentration, krystallisering og andre trin.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9924\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-5.png\" alt=\"\" width=\"439\" height=\"182\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-5.png 439w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/10\/2-5-18x7.png 18w\" sizes=\"(max-width: 439px) 100vw, 439px\" \/><\/p>\n<p>Tagatose har 92% af sakkarosens s\u00f8dme og kun en tredjedel af sakkarosens kalorier. Det har ogs\u00e5 sakkarosens forarbejdningsegenskaber og er tilb\u00f8jeligt til karamellisering og melardreaktion, s\u00e5 det kan bruges i f\u00f8devareforarbejdning som erstatning for sakkarose.<br \/>\nN\u00e5r tagatose bruges sammen med andre s\u00f8destoffer, har det samtidig en forst\u00e6rkende effekt p\u00e5 s\u00f8dmen og kan give en unik smag.<br \/>\nAbsorptionshastigheden af tagatose i menneskekroppen er lav, kun 20% absorberes af tyndtarmen, og der er ingen signifikant \u00e6ndring i blodsukkerniveauet. Den anden er at forbedre forarbejdningsteknologien, hele processen fra g\u00e6ring til bagning skal afklare den funktionelle mekanisme, perfekte procesbetingelser for at g\u00f8re det i bagefeltet.<br \/>\n3.2 Anvendelse i tyggegummi Tils\u00e6tning af sm\u00e5 doser tagatose i tyggegummi kan forl\u00e6nge s\u00f8dmeperioden og give en s\u00e6rlig smag, som b\u00e5de kan tils\u00e6ttes tyggegummi og bruges som sukkerovertr\u00e6k.<br \/>\nTils\u00e6tning af mere end 15% kan give smag af pebermynteolie og frugt samt forbedre smagen af pebermynteolie og fremme noget af surheden i frugtsmagen, men \u00f8ger ikke tyggegummiviskositeten.<br \/>\nTagatose kan bruges sammen med andre polyoler og xylitol for at kompensere for ulempen ved diarr\u00e9 for\u00e5rsaget af et h\u00f8jt polyolforbrug.<br \/>\n3.3 Anvendelse i drikkevarer Lavenergidrikke mangler ofte tekstur og smag sammenlignet med st\u00e6rkt s\u00f8dede drikkevarer. Tils\u00e6tning af 1% Tagatose til lavenergidrikke kan give bedre mundf\u00f8lelse, maskere u\u00f8nskede smage, reducere bitterhed og harmonisere s\u00f8dme.<br \/>\nTagatose tilsat kom\u00e6lksbaserede drikkevarer som chokoladeyoghurt og frugtyoghurt kan forbedre den d\u00e5rlige smag, der er forbundet med brugen af s\u00f8destoffer med h\u00f8j s\u00f8dme, og samtidig opn\u00e5 en god s\u00f8dme, forl\u00e6nge s\u00f8dmen og reducere bitterheden.<br \/>\n3.4 Anvendelse i k\u00f8dprodukter K\u00f8dprodukter som t\u00f8rret k\u00f8d og skinke indeholder relativt h\u00f8je niveauer af kulhydrater (2% til 7%), hvilket let kan f\u00f8re til mikrobiel kontaminering og dermed \u00f8konomiske tab.<br \/>\nI k\u00f8dindustrien er kravene til konserveringsmidler og fungicider meget strenge, s\u00e5 det kan overvejes at tils\u00e6tte kulhydrater, der ikke kan udnyttes af mikroorganismer, til k\u00f8dprodukter.<br \/>\nTagatose kan ikke udnyttes af m\u00e6lkesyrebakterier, der kan for\u00e5rsage ford\u00e6rv, og nogle patogene bakterier som E. coli, Salmonella, Staphylococcus aureus osv.
