Ud over at give maden en syrlig smag regulerer surhedsregulerende midler ogs\u00e5 madens pH-v\u00e6rdi, fungerer som antioxidantsynergister, forhindrer harskning eller brunfarvning af maden, h\u00e6mmer v\u00e6ksten af mikroorganismer og forhindrer ford\u00e6rvelse af maden.<br \/>\nSyrer kan inddeles i to kategorier alt efter deres sammens\u00e6tning: organiske syrer og uorganiske syrer. Organiske syrer bruges hovedsageligt som syrningsmidler. Organiske syrer i naturlige f\u00f8devarer omfatter citronsyre, vinsyre, \u00e6blesyre osv. Eddikesyre og m\u00e6lkesyre produceres ved fermentering af f\u00f8devarer. Naturligt forekommende vinsyre er af d-typen, og syntetisk vinsyre er af dI-typen. Almindelig vinsyre er d-type vinsyre.<br \/>\n3.4 M\u00e6lkesyre M\u00e6lkesyre er opdelt i to typer: a-type og \u03b2-type, og a-type m\u00e6lkesyre produceres ved hj\u00e6lp af almindelige metoder.
