{"id":9554,"date":"2024-09-02T02:18:13","date_gmt":"2024-09-02T02:18:13","guid":{"rendered":"https:\/\/longchangextracts.com\/?p=9554"},"modified":"2024-09-02T02:18:13","modified_gmt":"2024-09-02T02:18:13","slug":"erythritol-on-vitamin-c","status":"publish","type":"post","link":"https:\/\/longchangextracts.com\/da\/erythritol-pa-c-vitamin\/","title":{"rendered":"Hvad er den beskyttende effekt af erythritol p\u00e5 C-vitamin i limonadedrikke?"},"content":{"rendered":"<h1>Hvad er den beskyttende effekt af erythritol p\u00e5 C-vitamin i limonadedrikke?<\/h1>\n<p>C-vitamin i frugtsaft er et af de vigtige n\u00e6ringsstoffer, som menneskekroppen har brug for i det daglige liv, men p\u00e5 grund af dets ustabilitet er det let at modtage indflydelse fra opbevaringsmilj\u00f8et, s\u00e5som temperatur, lys og det interne system af frugtsaft PH og andre forhold, som for\u00e5rsager oxidationsreaktion og genererer et stort antal frie radikaler, hvilket resulterer i den oxidative nedbrydning af C-vitamin.<\/p>\n<p>Erythritol, som er en ny type naturligt s\u00f8demiddel, der er blevet promoveret i de senere \u00e5r, bruges i vid udstr\u00e6kning i drikkevare- og konfektureindustrien p\u00e5 grund af sin rene s\u00f8dme og ingen ubehagelig bitter eftersmag samt sit lave kalorieindhold, h\u00f8je tolerance og ingen blodsukkersvingninger for\u00e5rsaget af stofskiftet i kroppen og andre biologiske egenskaber.<\/p>\n<p>Samtidig har forskere fundet ud af, at erythritol ogs\u00e5 kan bruges som en antioxidant, der effektivt kan fjerne frie radikaler og h\u00e6mme deres dannelse. P\u00e5 nuv\u00e6rende tidspunkt fokuserer indenlandsk og udenlandsk forskning i erythritol i drikkevarer hovedsageligt p\u00e5 dets anvendelse som en ny type s\u00f8demiddel, og denne artikel tager citronsaft som et eksempel for at unders\u00f8ge den beskyttende virkning af erythritol p\u00e5 C-vitamin i citronsaft om morgenen.<\/p>\n<p><strong>Kinetik for termisk nedbrydning af C-vitamin i citronsaft<\/strong><br \/>\n<strong>Kinetisk unders\u00f8gelse af termisk nedbrydning<\/strong><\/p>\n<p>Tendenserne for C-vitaminindholdet i citronsaftdrikke med tiden ved forskellige temperaturer blev opn\u00e5et ved eksperimentel bestemmelse og tilpasset, og tilpasningsresultaterne er vist i fig. 1.<br \/>\nDet fremg\u00e5r af figur 1, at indholdet af C-vitamin gradvist faldt med forl\u00e6ngelsen af opbevaringstiden for citronsaftdrikke, og nedbrydningshastigheden blev accelereret i takt med temperaturstigningen. Bevaringsgraden for C-vitamin var 60,82%, 31,98 og 8,48% ved 16 ugers opbevaring under milj\u00f8forhold p\u00e5 henholdsvis 20, 30 og 40 \u00b0C.<\/p>\n<p>Tilpasningsresultaterne viste, at nedbrydningen af C-vitamin i citronsaftdrikke ved forskellige temperaturer blev modelleret af en sammensat f\u00f8rsteordens reaktionskinetisk model, dvs:<br \/>\nNedbrydningshastighedskonstanten k for C-vitamin ved forskellige temperaturer blev beregnet ud fra ligning (1) fra de eksperimentelle data og analyseret ved line\u00e6r regression, som blev opn\u00e5et ved at tage logaritmen af venstre og h\u00f8jre side af Arrhenius-ligningen p\u00e5 samme tid:<br \/>\nI henhold til ovenst\u00e5ende ligning (2) blev det logaritmiske bl\u00e6k af hastighedskonstanten for den prim\u00e6re C-vitaminreaktion plottet mod den inverse 1\/T til venstre for opbevaringstemperaturen, som vist i figur 2, og aktiveringsenergien Ea og fingerforwardfaktoren A blev opn\u00e5et fra henholdsvis h\u00e6ldningen og sk\u00e6ringen af den lige linje, og resultaterne er vist i tabel 2.<br \/>\nDet anses normalt, at aktiveringsenergien Ea for en kemisk reaktion er 40-400 kJ\/mol, og jo mindre aktiveringsenergien Ea er, jo lettere er reaktionen at gennemf\u00f8re. N\u00e5r Ea  400kJ\/mol, er reaktionshastigheden meget lille. Af tabel 2 kan man se, at C-vitaminet i citronsaftdrikke er let at nedbryde under opbevaringsprocessen.<\/p>\n<p><strong>Effekten af erythritol p\u00e5 C-vitamin<\/strong><br \/>\n<strong>Effekt af erythritol p\u00e5 nedbrydningshastigheden af C-vitamin<\/strong><\/p>\n<p>Virkningerne af forskellige erythritoltils\u00e6tninger p\u00e5 C-vitaminindholdet i citronsaftdrikke over tid blev bestemt eksperimentelt ved konstant temperatur og tilpasset tendensen, og resultaterne er vist i figur 3-5.<\/p>\n<p>Tilpasningsresultaterne viste, at nedbrydningshastigheden af C-vitamin i citronsaftdrikke med tiden under de ovenn\u00e6vnte betingelser var i overensstemmelse med den f\u00f8rste ordens reaktionskinetiske model. Det fremg\u00e5r af figur 3-figur 5, at nedbrydningshastigheden for C-vitamin blev langsommere med stigningen i tils\u00e6tningen af erythritol under konstant temperatur, og tilbageholdelseshastigheden for C-vitamin efter 16 ugers opbevaring blev alle \u00f8get i forskellig grad i forhold til kontrollen (ingen tils\u00e6tning).<\/p>\n<p>I henhold til ovenst\u00e5ende eksperimentelle data blev nedbrydningshastighedskonstanterne k og den tilsvarende aktiveringsenergi Ea og fingerforward-faktor A for C-vitamin under forskellige forhold beregnet ved hj\u00e6lp af Eq. (1) og Eq. (2), og resultaterne er vist i tabel 2.<\/p>\n<p>Som vist i tabel 2 var aktiveringsenergierne for nedbrydningsreaktionen af C-vitamin i citronsaft efter tils\u00e6tning af erythritol h\u00f8jere end for pr\u00f8verne uden tils\u00e6tning af erythritol (65,68% kJ\/mol), s\u00e5 nedbrydningsreaktionen af C-vitamin var vanskelig at gennemf\u00f8re i sammenligning med kontrolgruppen, og aktiveringsenergierne viste grundl\u00e6ggende en stigende tendens med stigningen i koncentrationen af tilsat erythritol.<\/p>\n<p>Blandt dem, n\u00e5r koncentrationen af erythritol var 2%, n\u00e5ede aktiveringsenergien for C-vitamin-nedbrydning et maksimum p\u00e5 75,47 kJ\/mol, hvilket var 9,79 kJ\/mol h\u00f8jere end for kontrollen; men med stigningen i koncentrationen af erythritol var aktiveringsenergien for reaktionen stort set u\u00e6ndret.<\/p>\n<p>Konklusionen er, at tils\u00e6tning af erythritol til citronsaft faktisk kan spille en rolle i beskyttelsen af C-vitamin til en vis grad.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9557\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/1-554x433.png\" alt=\"\" width=\"554\" height=\"433\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9558\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/2-536x433.png\" alt=\"\" width=\"536\" height=\"433\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9555\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/4-487x433.png\" alt=\"\" width=\"487\" height=\"433\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9559\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/3-650x218.png\" alt=\"\" width=\"650\" height=\"218\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-9556\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/5.png\" alt=\"\" width=\"482\" height=\"417\" srcset=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/5.png 482w, https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/09\/5-14x12.png 14w\" sizes=\"(max-width: 482px) 100vw, 482px\" \/><\/p>","protected":false},"excerpt":{"rendered":"<p>What is the protective effect of erythritol on vitamin C in lemonade drinks?
