I dag har karry udviklet mange nationale kendetegn, hvoraf thailandsk karry er meget popul\u00e6r p\u00e5 grund af den omfattende brug af kokosm\u00e6lk og tils\u00e6tning af citrongr\u00e6s, fiskesauce osv. som reducerer krydringen og forbedrer den bl\u00f8de smag. Thai karry inddeles hovedsageligt i gul, r\u00f8d og gr\u00f8n.
