FoodPartner.com ser n\u00e6rmere p\u00e5 de kompatible anvendelser af kostfibre i f\u00f8devarer.<\/h1>\n<p><strong>Definition af kostfibre<\/strong><\/p>\n<p>Udtrykket \"kostfibre\" blev f\u00f8rst opfundet i 1953 af Hipsley i hans unders\u00f8gelse af graviditetstoks\u00e6mi, og den f\u00f8rste metode til bestemmelse af de samlede kostfibre (enzymv\u00e6gtmetoden - AOAC 985.29) blev offentliggjort i 1985 af American Institute of Chemists (AOAC). Den f\u00f8rste metode til bestemmelse af den samlede m\u00e6ngde kostfibre (enzymv\u00e6gtsmetoden - AOAC 985.29) blev offentliggjort af American Association of Chemists (AOAC) i 1985, og siden da er der n\u00e5et en milep\u00e6l i forst\u00e5elsen af udtrykket \"r\u00e5fibre\" til \"kostfibre\".<\/p>\n<p>I Basic Terminology of Nutritional Composition of Food (GB\/Z 21922-2008) henviser kostfibre til naturligt forekommende, ekstraherede eller syntetiske kulhydratpolymerer i planter med en polymerisationsgrad p\u00e5 DP \u2265 3, som ikke kan ford\u00f8jes og absorberes af menneskekroppens tyndtarm, og som er af sundhedsm\u00e6ssig betydning for menneskekroppen.<\/p>\n<p>Den 6. september 2023 blev \"National Standard for Food Safety Determination of Dietary Fiber in Food\" (GB 5009.88-2023) frigivet, GB 5009.88-2023 i definitionen af kostfibre kan ikke ford\u00f8jes og absorberes af menneskekroppens tyndtarm, graden af polymerisation \u2265 3 kulhydratpolymerer. Det er opdelt i opl\u00f8selige kostfibre og uopl\u00f8selige kostfibre, og summen af de to er den samlede kostfiber.<\/p>\n<p>Opl\u00f8selige kostfibre er den del af kostfibrene, der kan opl\u00f8ses i vand, herunder uford\u00f8jelige oligosakkarider og nogle polysakkarider. Der er udf\u00f8rt omfattende forskning i kostfibrenes biologiske rolle, hvilket ogs\u00e5 giver teoretisk st\u00f8tte til deres anvendelse i funktionelle f\u00f8devarer og helsekost.<\/p>\n<p><strong>5.1 Sundhedseffekter p\u00e5 tarmen<\/strong><br \/>\nLindre forstoppelse: Kostfibrenes g\u00e6ringsdygtige natur fremmer f\u00e6kal ekspansion og \u00f8ger f\u00e6kal v\u00e6gt, mens de kortk\u00e6dede fedtsyrer, der produceres ved fermentering, reducerer tarmens pH og yderligere fremmer fysiologisk peristaltik sammen med virkningen af gasser, der produceres ved fermentering.<\/p>\n<p>Fremme v\u00e6ksten af probiotika: De fleste af de fermenterede stoffer i den menneskelige tyktarm, s\u00e5som resistente oligosakkarider, resistent stivelse, resistent dextrin osv., er substrater for tyktarmens mikroorganismer, hvilket viser deres \"pr\u00e6biotiske\" egenskaber. Det vil sige, at de selektivt stimulerer v\u00e6ksten af den probiotiske flora og h\u00e6mmer aktiviteten eller v\u00e6ksten af den skadelige flora og dermed fremmer v\u00e6rtens sundhed.<\/p>\n<p>Tarmens barrierefunktion og immunitet: Moderm\u00e6lk indeholder en r\u00e6kke oligosakkarider, der anses for at v\u00e6re fremmere af probiotika i sp\u00e6dbarnets tarm og er afg\u00f8rende for udviklingen og opretholdelsen af tarmens immunitet.<\/p>\n<p><strong>5.2 Rolle i blodsukkerregulering og forebyggelse af type 2-diabetes<\/strong><br \/>\nDe fleste typer kostfibre har et lavt glyk\u00e6misk indeks, og nogle kohortestudier har vist, at indtagelse af hele kostfibre er negativt forbundet med risikoen for type 2-diabetes.<\/p>\n<p><strong>5.3 M\u00e6thedens rolle og v\u00e6gtregulering<\/strong><br \/>\nKostfibre \u00f8ger m\u00e6theden og har en gavnlig effekt p\u00e5 energibalancen og v\u00e6gtkontrol, og indtagelse af kostfibre er negativt forbundet med body mass index, procent kropsfedt og kropsv\u00e6gt.<\/p>\n<p><strong>5.4 P\u00e5virkning af mineraloptagelse<\/strong><br \/>\nEn del af kostfibrene i tyktarmsfermenteringen kan \u00f8ge absorptionen af mineraler, s\u00e5som vandopl\u00f8selige fibre p\u00e5 calcium-, magnesium- og jernabsorption har en fremmende effekt, uopl\u00f8selige fibre og fytinsyre og andre kombinationer kan p\u00e5virke absorptionen af mineraler, is\u00e6r et stort antal indtag af uopl\u00f8selige fibre, adsorptionen af mineraler kan udledes med aff\u00f8ringen.<\/p>\n<p><strong>5.5 Forebyggelse af visse kr\u00e6ftformer<\/strong><br \/>\nKostfibre har en forebyggende effekt p\u00e5 tyktarmskr\u00e6ft og brystkr\u00e6ft.<\/p>\n<p><strong>Konklusion<\/strong><\/p>\n<p>Kostfibre har en bred anvendelsesmulighed inden for funktionelle f\u00f8devarer og helsekost p\u00e5 grund af deres bem\u00e6rkelsesv\u00e6rdige r\u00e5materialeegenskaber.
