Lad os se p\u00e5 emulgatorernes mekanisme!<\/p>\n<p><strong>Emulsion<\/strong><\/p>\n<p>I f\u00f8devareemulsioner best\u00e5r den ene fase ofte af vand eller en vandig opl\u00f8sning, som samlet kaldes <strong>hydrofil fase<\/strong>; den anden fase er ikke-blandbar med vand i den organiske fase, eller <strong>lipofil fase<\/strong>. To ikke-blandbare v\u00e6sker, som f.eks. vand og olie, kan danne to typer emulsioner, n\u00e5r de blandes, dvs, <strong>olie-i-vand (O\/W) og vand-i-olie (W\/O)<\/strong> emulsion.<\/p>\n<p>I olie-i-vand-emulsionen er olie til sm\u00e5 dr\u00e5ber dispergeret i vand, oliedr\u00e5ber til den dispergerede fase, vand til dispergeringsmediet, s\u00e5som k\u00e6rnem\u00e6lk, der er en O\/W-type emulsion; i vand-i-olie-emulsionen er det modsatte, vand til sm\u00e5 dr\u00e5ber dispergeret i olie, vand til den dispergerede fase, olie til dispergeringsmediet, s\u00e5som margarine, der er en W \/ O-type emulsion.<\/p>\n<p><strong>Emulgatorens mekanisme<\/strong><\/p>\n<p>F\u00f8devareemulgatorer, ogs\u00e5 kendt som <strong>overfladeaktive stoffer<\/strong>eller som er at g\u00f8re den ublandbare v\u00e6ske til en ensartet dispergeret fase (emulsion) af stoffet, tilsat til f\u00f8devaren kan reducere gr\u00e6nsefladesp\u00e6ndingen mellem olie- og vandfaserne betydeligt, s\u00e5 <strong>at den ublandbare olie (hydrofobe stoffer) og vand (hydrofile stoffer) danner en stabil emulsion af f\u00f8devaretils\u00e6tningsstofferne.<\/strong><\/p>\n<p>Emulgator p\u00e5 den ene side, gennem de to gensidigt eksklusive faseoverflader, dannelsen af et tyndt molekyl\u00e6rt lag, reducerer den frie overfladeenergi i hele systemet og dannelsen af nye gr\u00e6nseflader, emulgatormolekyler med hydrofile og lipofile to typer grupper, disse to typer grupper kan adsorberes i henholdsvis olie og vand p\u00e5 overfladen af de to gensidigt eksklusive faser, dannelsen af et tyndt lag af molekyler for at reducere gr\u00e6nsefladesp\u00e6ndingen i de to faser, det vil sige oliemolekyler med den lipofile del af emulgatoren p\u00e5 den ene side, og den hydrofile del af vandmolekyler med den anden side af emulgatoren p\u00e5 den anden side. Med andre ord er den lipofile del af oliemolekylerne og emulgatoren p\u00e5 den ene side, og den hydrofile del af vandmolekylerne og emulgatoren er p\u00e5 den anden side;<\/p>\n<p>P\u00e5 den anden side giver det dr\u00e5berne en st\u00e6rk rumlig stabiliseringseffekt ved at danne et beskyttende adsorptionslag p\u00e5 overfladen af dr\u00e5berne. For at udtrykke den hydrofile og lipofile balance i en emulgator bruges HLB-v\u00e6rdien (Hydrophilic Lipophilic Balance) normalt, og en emulgators hydrofilitet udtrykkes i form af HLB-v\u00e6rdien. Derfor er alle emulgatorer med en HLB-v\u00e6rdi p\u00e5 &lt;10 hovedsageligt lipofile, mens emulgatorer med HLB-v\u00e6rdier p\u00e5 \u226510 har en hydrofil karakter.<\/p>\n<p>For blandede emulgatorer er deres HLB-v\u00e6rdier additive.
