L\u00e6derrester er rige p\u00e5 funktionelle komponenter som kostfibre og flavonoider, og udviklingen og udnyttelsen af dem er gavnlig for at forbedre virksomhedernes effektivitet og beskytte milj\u00f8et.<br \/>\nTrypsin er et vigtigt ford\u00f8jelsesenzym hos b\u00e5de mennesker og dyr, som kan aktivere andre ford\u00f8jelsesenzymer og spille en afg\u00f8rende rolle i den metaboliske proces. I mellemtiden er forekomsten af forskellige sygdomme (pancreatitis, emfysem, hjerne\u00f8dem, kr\u00e6ft osv.) Citrusflavonoidernes h\u00e6mning af trypsin er reversibel og tilh\u00f8rer en blandet h\u00e6mningstype af konkurrencepr\u00e6get h\u00e6mning og ikke-konkurrencepr\u00e6get h\u00e6mning, hvor den konkurrencepr\u00e6gede h\u00e6mning dominerer.<\/p>\n<p>Fluorescensspektroskopi bruges ofte til at unders\u00f8ge samspillet mellem sm\u00e5 molekyler og proteiner. Dette eksperiment viste, at citrusflavonoider (naringin) kan sv\u00e6kke fluorescensspektrets intensitet af trypsin, hvilket for\u00e5rsager en r\u00f8d forskydning i fluorescenstoppen og udviser statisk slukning. Analyse af bindingskonstanter og bindingssteder afsl\u00f8rede, at naringin har \u00e9t bindingssted med trypsin, og de vigtigste bindingskr\u00e6fter er hydrogenbinding og van der Waals-kr\u00e6fter. I eksperimentet blev det ogs\u00e5 konstateret, at bindingskonstanten Ka mellem naringin og trypsin faldt med stigende temperatur, med 1,10x106L\/mol ved 20 \u2103 (293K) og 1,04x105L\/mol ved 35 \u2103 (308K), hvilket indikerer st\u00e6rkere binding ved lave temperaturer.
