Dets ekspressionsniveau og aktivitet bestemmer hastigheden og udbyttet af melaninsyntesen. H\u00e6mning af tyrosinaseaktiviteten kan forbedre tyrosinasemetabolismen i pigmentceller i huden, forhindre dannelsen af pigmentering og spille en rolle i at forhindre dannelsen af fregner, melasma, alderspletter og blegning. De almindeligt anvendte tyrosinaseh\u00e6mmere, s\u00e5som quercetin og hydroquinon, har gode h\u00e6mmende evner, men kan for\u00e5rsage bivirkninger s\u00e5som dermatitis, hudallergier og endda hudkr\u00e6ft. Derfor er s\u00f8gningen efter sikre, effektive og ugiftige tyrosinaseh\u00e6mmere i \u00f8jeblikket et varmt forskningsemne. Wang et al. fandt, at antioxidanter som glycyrrhizinsyre, resveratrol, oxideret resveratrol og phenethylresorcinol har en synergistisk effekt mellem antioxidantaktivitet og tyrosinaseh\u00e6mning, n\u00e5r de bruger L-dopa som substrat, hvilket i h\u00f8j grad h\u00e6mmer tyrosinaseaktiviteten. Olivenbitterglykosid har st\u00e6rk antioxidantaktivitet.
