Den indeholder masser af aromatiske oliekomponenter. Rosmarin har en st\u00e6rk aroma og bruges ofte i madlavningskrydderier, naturlige konserveringsmidler i f\u00f8devareindustrien samt som pryd- og l\u00e6geplanter. Forskning har vist, at rosmarin og andre urter har god antioxidantaktivitet blandt en lang r\u00e6kke urter og krydderier.<br \/>\n\u00c6terisk olie er et sekund\u00e6rt produkt, der dannes under plantens stofskifte, og som er et stof med h\u00f8j koncentration af aroma og flygtighed. Det findes i visse s\u00e6rlige organer i planter og spiller forskellige \u00f8kologiske funktioner. P\u00e5 grund af de forskellige biologiske aktiviteter i \u00e6teriske olier vokser deres anvendelse inden for mange omr\u00e5der som f.eks. f\u00f8devareindustrien, kosmetikindustrien, planteterapi, medicin osv. konstant. Selvom syntetiske antioxidanter og konserveringsmidler er blevet brugt i vid udstr\u00e6kning i f\u00f8devareindustrien, kan langvarig brug af dem udg\u00f8re en vis risiko for menneskers sundhed. Derfor har mange nyere unders\u00f8gelser s\u00f8gt efter naturlige aktive ingredienser. \u00c6teriske planteolier, som er et naturligt ekstrakt, er blevet foresl\u00e5et som et potentielt alternativ til syntetiske antioxidanter. \u00c6terisk rosmarinolie er en farvel\u00f8s eller lysegul v\u00e6ske, der udvindes af st\u00e6ngler, blade, blomster osv. med en plantespecifik lugt, der hovedsageligt indeholder \u03b1-pinen, 1,8-cineol, kamfen, kamfer, borneol, caryophyllen og andre terpenoider. \u00c6terisk rosmarinolie har antioxidante, bakteriostatiske og antiseptiske virkninger og bruges i vid udstr\u00e6kning inden for medicin, f\u00f8devareindustri og aromaterapi. De mest indholdsrige komponenter i \u00e6terisk rosmarinolie var \u03b1-pinen (39.05%) og 1,8-cineol (16.86%), efterfulgt af camphen (4.22%), D-limonen (3,87%), borneol (3,74%), \u03b2-caryophyllen (3,11%), geraniol (2,92%), \u03b2-pinen (2,23%), kamfer (2,16%) osv. I henhold til internationale ISO-standarder tilh\u00f8rer Jiangxi rosmarin \u00e6terisk olie den spanske type. Rosmarin er et almindeligt anvendt krydderi i det vestlige k\u00f8kken, der er kendetegnet ved en blandet aroma af ingredienser som kamfer, kamferestere og kamfer samt en s\u00f8d og tr\u00e6agtig aroma og smag med en rig aroma. IC50-v\u00e6rdierne for frie DPPH-radikaler, frie hydroxylradikaler og den reducerende effekt af \u00e6terisk rosmarinolie er henholdsvis 76,42, 51,40 og 49,15 \u03bc L\/mL. Det kan ses, at \u00e6terisk rosmarinolie har en god antioxidantaktivitet og en god rensende effekt p\u00e5 frie radikaler. Ra \u0160 kovic' og andre unders\u00f8gelser har vist, at \u00e6terisk rosmarinolie har god antioxidantaktivitet. Sammens\u00e6tningen af \u00e6terisk rosmarinolie fra forskellige habitater varierer meget, hvilket f\u00f8rer til forskellige IC50-v\u00e6rdier. Det fremg\u00e5r af h\u00e6mningscirkelst\u00f8rrelsen for \u00e6terisk rosmarinolie mod Bacillus subtilis, Staphylococcus aureus og Escherichia coli p\u00e5 14,40 \u00b1 0,66, 11,41 \u00b1 0,19, 11,70 \u00b1 0,27 mm og den mindste h\u00e6mmende koncentration (MIC) p\u00e5 2,50, 10,00, 10,00 \u03bc L\/mL, at \u00e6terisk rosmarinolie har en god bakteriostase mod de tre testede bakterier og har en bredspektret bakteriostase. Den \u00e6teriske olies h\u00e6mmende virkning p\u00e5 Bacillus subtilis er betydeligt st\u00e6rkere end p\u00e5 Staphylococcus aureus og Escherichia coli. Jiang et al. rapporterede, at den antibakterielle aktivitet af \u00e6terisk rosmarinolie var bedre end \u03b1-pinen og 1,8-cineol. Det blev udledt, at den antibakterielle aktivitet af \u00e6terisk rosmarinolie var den synergistiske effekt af dens kemiske komponenter.
