Bananer er rige p\u00e5 n\u00e6ringsstoffer og indeholder forskellige sporstoffer, som menneskekroppen har brug for. Efter h\u00f8st er de ikke modstandsdygtige over for opbevaring og er tilb\u00f8jelige til at r\u00e5dne og blive forringet. Flygtige komponenter er vigtige kvalitetsindikatorer til evaluering af friskheden af frugt og gr\u00f8ntsager som f.eks. bananer. Fastfasemikroekstraktion (SPME) har fordelene ved ingen forurening, lave omkostninger og enkel og praktisk drift og er i \u00f8jeblikket en almindeligt anvendt forbehandlingsteknik til bestemmelse af flygtige komponenter i pr\u00f8ver. Den kombinerede bestemmelse af flygtige komponenter i pr\u00f8ver ved hj\u00e6lp af SPME og GC-MS er en meget anvendt model.
