Dens frugtk\u00f8d, fr\u00f8 og blade har h\u00f8j medicinsk v\u00e6rdi. Det kan bruges til at udvikle produkter som f.eks. h\u00e6mning af s\u00f8d smag, antidepressivt middel, leverbeskyttelse og antibakterielt middel.<br \/>\nTidligere unders\u00f8gelser har vist, at typerne og indholdet af komponenter i traditionelle kinesiske l\u00e6gemidler underg\u00e5r betydelige \u00e6ndringer p\u00e5 forskellige v\u00e6kststadier. \u00c5rsagen til dette f\u00e6nomen kan skyldes forskelle i lys, vand og eksterne stimuli under v\u00e6kstprocessen af l\u00e6geplanter eller frugter, som igen p\u00e5virker syntesen af sekund\u00e6re metabolitter i deres kroppe. Xiang et al. m\u00e5lte forskellige v\u00e6kststadier af Hypericum perforatum og brugte PCA-analyse til at bestemme det optimale h\u00f8ststadium for Hypericum perforatum i forskellige v\u00e6kststadier; Yan et al. p\u00e5viste n\u00e6ringsindholdet i jujube-frugter i forskellige modenhedsstadier og analyserede \u00e6ndringerne i n\u00e6ringsindholdet under modningsprocessen. Derfor er det af stor betydning for komponentanalyse, kvalitetskontrol og h\u00f8stperiode at analysere forskellene i sammens\u00e6tningen af jujube-frugtk\u00f8d p\u00e5 forskellige modningsstadier.<br \/>\nDenne unders\u00f8gelse h\u00f8stede moden r\u00f8d frugtjujube og gr\u00f8n frugtjujube. Ved hj\u00e6lp af UPLC-Q-TOF-MS\/MS-teknologi til at analysere de vigtigste komponenttyper af gr\u00f8n og moden jujube-frugtmasse og kombinere PCA-principal komponentanalysemetode, beregne forskellene i prim\u00e6re metabolitter mellem de to gr\u00f8nne og modne jujube-frugtmasse, bestemme indholdet af forskellige prim\u00e6re metabolitter og sekund\u00e6re metabolitter og endelig analysere den biosyntetiske vej gennem forskellene i metabolitindhold.<\/p>\n<p>Analyse og validering af de biosyntetiske veje for flavonoider i sur jujube. If\u00f8lge karakteriseringen af komponent \"2.1\" blev der opn\u00e5et fem flavonoider, nemlig rutin, quercetin, hyperosid, catechin og epicatechin. Syntesen af flavonoider er hovedsageligt baseret p\u00e5 L-phenylalanin og L-tyrosin som forstadier, som syntetiseres gennem forskellige forgreningsveje (se figur 6). Ved at analysere metabolitterne i k\u00f8det af gr\u00f8n jujube og moden jujube fandt man ud af, at der var forskelle i indholdet af L-phenylalanin og L-tyrosin mellem de to frugtk\u00f8d. Indholdet af de to metabolitter i moden jujube-frugtmasse var h\u00f8jere end i gr\u00f8n jujube-frugtmasse. Gennem indholdsbestemmelse blev det konstateret, at indholdet af rutin, hyperosid og quercetin i moden jujube-frugtmasse var h\u00f8jere end i gr\u00f8n jujube-frugtmasse, hvilket yderligere bekr\u00e6ftede de betydelige \u00e6ndringer i flavonoide komponenter under modningsprocessen fra gr\u00f8n jujube til moden jujube-frugtmasse. Indholdet af catechiner og epicatechiner faldt dog i k\u00f8det af modne jujubefrugter, hovedsageligt fordi catechiner og epicatechiner hovedsageligt var fordelt i frugtskallen. Epicatechiner har en st\u00e6rk syrlighed, mens catechiner har b\u00e5de syrlighed og bitterhed, som er de vigtigste stoffer, der for\u00e5rsager frugtens syrlighed. N\u00e5r frugten er umoden, indeholder den derfor flere catechiner og epicatechiner. I l\u00f8bet af frugtmodningsprocessen falder indholdet af catechiner og epicatechiner gradvist, og indholdet er lavest, n\u00e5r frugten er helt moden. Derfor \u00e6ndrer indholdet af catechiner og epicatechiner sig omvendt med indholdet af andre flavonoider under overgangen fra gr\u00f8n jujube til moden jujube. Da catechiner og epicatechiner bestemmer frugtens bitre smag, tyder det p\u00e5, at de kan udg\u00f8re et videnskabeligt grundlag for indtagelse af jujubek\u00f8d.<\/p>\n<p>Analyse og validering af terpenoidkomponenter i sur jujube. If\u00f8lge karakteriseringen af komponent \"2.1\" blev der opn\u00e5et fire triterpenoider, nemlig jujubefr\u00f8-saponin B, ursolsyre, oleanolsyre og betulinsyre. Gennem indholdsbestemmelse fandt man ud af, at indholdet af ursolsyre og oleanolsyre i modent jujube-frugtk\u00f8d var lavere end i gr\u00f8nt jujube-frugtk\u00f8d. \u00c5rsagen til dette f\u00e6nomen er, at disse to metabolitter bidrager til planteforsvaret. For eksempel har triterpenoider svampedr\u00e6bende egenskaber og kan modst\u00e5 toksinproduktion, hvilket bestemmer, at indholdet af disse to metabolitter i gr\u00f8n frugt er h\u00f8jere end i moden frugt.<\/p>\n<p>Kort sagt bestemmes frugtens smags\u00e6ndringer af indholdet af catechiner og epicatechiner.
