Lam indeholder ikke kun komponenterne fra almindelige s\u00f8de kartofler, men er ogs\u00e5 rig p\u00e5 forskellige aktive ingredienser som anthocyaniner, phenolforbindelser, glycoproteiner, carotenoider osv. Det har betydelige fysiologiske virkninger som antioxidant, antitumor, hukommelsesforbedring, forebyggelse af forh\u00f8jet blodtryk og forbedring af kroppens immunsystem. Den phenoliske hydroxylstruktur i anthocyaniner giver dem god antioxidantaktivitet, som effektivt kan h\u00e6mme ROS-skader p\u00e5 kroppen. Resultaterne viste, at dampning og kogning effektivt kan omdanne de bundne fytokemikalier i lilla s\u00f8de kartofler og guler\u00f8dder til frie tilstande for menneskelig absorption og udnyttelse, og nedbrydningsgraden af fytokemikalier for\u00e5rsaget af dampning og kogning er relativt lav sammenlignet med stegning og mikrob\u00f8lgebehandling. Samtidig blev DPPH- og ABTS-metoderne brugt til at bestemme antioxidantaktiviteten af dampede, kogte, stegte, mikrob\u00f8lgebehandlede og ubehandlede lilla s\u00f8de kartofler og guler\u00f8dder. Det viste sig, at dampede og kogte forarbejdede lilla s\u00f8de kartofler og guler\u00f8dder havde bedre antioxidantaktivitet sammenlignet med andre forarbejdningsmetoder. Korrelationsanalysen viste ogs\u00e5, at de samlede fenoler, de samlede anthocyaniner og de samlede carotenoider viste gode positive korrelationer med DPPH og ABTS, hvilket indikerer en god positiv sammenh\u00e6ng mellem plantens kemiske indhold og dens antioxidantaktivitet.<br \/>\nDen lilla s\u00f8de kartoffel og guleroden, der blev behandlet med samme metode, blev blandet i henhold til forskellige friskv\u00e6gtsforhold, og den blandede kombination viste betydelige antioxidante synergistiske effekter. I DPPH-gruppen n\u00e5ede den synergistiske hastighed sit maksimum (50,76%), n\u00e5r kogte og forarbejdede lilla s\u00f8de kartofler blev blandet med guler\u00f8dder i et forhold p\u00e5 2:8. I ABTS-gruppen havde mikrob\u00f8lgegruppen 5:5 den h\u00f8jeste antioxidante synergihastighed (39,52%), efterfulgt af mikrob\u00f8lgegruppen 4:6 (38,41%), mens dampgruppen 8:2 havde den laveste antioxidante synergihastighed (0,03%). N\u00e5r forholdet mellem lilla s\u00f8de kartofler og guler\u00f8dder er omkring 2:8 til 4:6 med hensyn til frisk v\u00e6gt, dvs. n\u00e5r guleroden udg\u00f8r en st\u00f8rre masse, er den antioxidante synergieffekt bedst. N\u00e5r friskv\u00e6gtsforholdet omregnes til indholdet af vandopl\u00f8selige og fedtopl\u00f8selige fytokemikalier for forholdet, kan den samlede antioxidante synergieffekt demonstreres betydeligt, n\u00e5r andelen af vandopl\u00f8selige fytokemikalier er h\u00f8jere.<br \/>\nIn vitro-simulerede ford\u00f8jelsesfors\u00f8g blev udf\u00f8rt p\u00e5 lilla s\u00f8de kartofler og guler\u00f8dder, der blev dampet, kogt, stegt, mikrob\u00f8lget og ubehandlet. \u00c6ndringerne i det samlede indhold af fenoler, flavonoider, anthocyaniner, carotenoider og antioxidantkapacitet blev m\u00e5lt p\u00e5 forskellige stadier.
