Mange af de retter, vi har delt f\u00f8r, har n\u00e6vnt brugen af disse to krydderier, men der er stadig mange mennesker, der siger, at de stadig ikke kan fort\u00e6lle, hvad der er majsstivelse? Hvad er stivelse? Hvad er forskellen p\u00e5 majsstivelse og s\u00f8d kartoffelstivelse, og hvilket pulver skal man bruge til at j\u00e6vne stir-fries og friturestege marineret k\u00f8d?<\/p>\n<p>Faktisk er der meget at sige her, for hvis du bruger det forkerte, er det sandsynligt, at en gryde med god mad bliver \u00f8delagt. Hvad er forskellen p\u00e5 stivelse og majsstivelse?<\/p>\n<p><strong>Forskel i r\u00e5materialer<\/strong><\/p>\n<p>Der er en hel del kilder til r\u00e5materialer, der bruges til at fremstille stivelse, og de navngives normalt efter r\u00e5materialerne.<br \/>\nI henhold til den nationale standard GB888788 er stivelse opdelt i disse fire kategorier, nemlig: kornstivelse, kartoffelindustri, b\u00f8nnestivelse, andre typer stivelse.<\/p>\n<p><strong>Stivelse<\/strong> er alle former for naturlig stivelse, der ikke er blevet behandlet med fysiske og kemiske metoder, og som heller ikke \u00e6ndrer stivelsens iboende fysiske og kemiske egenskaber.<\/p>\n<p><strong>R\u00e5t m\u00e5ltid<\/strong> refererer normalt til majsstivelse og kartoffelstivelse.<\/p>\n<p><strong>Forskel i konsistens<\/strong><\/p>\n<p>Stivelsens viskositet er meget vigtig, fordi forskellig viskositet direkte bestemmer brugen af stivelse, under hvilke omst\u00e6ndigheder, hvis dette punkt ikke mestres, rodet brug, ikke kun kan ikke g\u00f8re sk\u00e5len mere glasur p\u00e5 kagen, men kan \u00f8del\u00e6gge en gryde med god mad.<\/p>\n<p>Den laveste viskositet er: majsstivelse (kartoffelstivelse).<br \/>\nModerat viskositet: majsstivelse.<br \/>\nDen st\u00e6rkeste viskositet er: s\u00f8d kartoffelstivelse.<br \/>\nDen st\u00e6rkeste viskositet er: mungb\u00f8nnestivelse.<\/p>\n<p><strong>Forskelle i brug<\/strong><\/p>\n<p>N\u00e5r du har l\u00e6rt om forskellige stivelsers viskositet, kan du se, hvordan du bruger den.<br \/>\n<strong>(1) Fortykkelse<\/strong><br \/>\nFortykning er den mest almindeligt anvendte tilberedningsmetode i vores daglige madlavning, i mange retter, der skal fortykkes, bruger vi stivelse, men den stivelse, der bruges her, er stivelsen i det r\u00e5 pulver, ogs\u00e5 kendt som kartoffelstivelse, og tilf\u00f8jer kartoffelstivelsesvand til fortykning af retter, s\u00e5 suppen er rund og ikke tyk og skinnende.
