Derfor mener jeg, at det er n\u00f8dvendigt at foretage en lille analyse af de tre substraters rolle.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7761\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/08\/1-331.png\" alt=\"\" width=\"438\" height=\"55\" \/><\/p>\n<p>For at lette forst\u00e5elsen af den rolle, som forskellige typer amylaser spiller, er det f\u00f8rst n\u00f8dvendigt at identificere to s\u00e6t begreber: <strong>lige k\u00e6de versus forgrenet stivelse og \u03b1-1,4-glykosidiske og \u03b1-1,6-glykosidiske bindinger.<\/strong><\/p>\n<p>Der findes to typer stivelse: stivelse med lige k\u00e6de og stivelse med forgrenet k\u00e6de. Enzymet starter fra den ikke-reducerende ende af stivelsen og hydrolyserer den \u03b1-1,4-glykosidiske binding sekventielt med to glukoserester for at producere maltose, som ikke kan hydrolysere den \u03b1-1,6-glykosidiske binding og heller ikke kan krydse forgreningspunktet og st\u00e5 tilbage med et meget langt dextrin, dvs. \u03b2-dextrin.<\/p>\n<p><strong>N\u00e5r \u03b2-amylase virker p\u00e5 stivelse med lige k\u00e6der, producerer den derfor n\u00e6sten udelukkende maltose; n\u00e5r den bruges p\u00e5 stivelse med forgreninger, er produkterne maltose og \u03b2-dextrin.<\/strong><\/p>\n<p><strong>R-enzym og dets virkning<\/strong><\/p>\n<p>R-enzymer, ogs\u00e5 kaldet afgreningsenzymer, virker p\u00e5 den \u03b1-1,6-glykosidiske binding. I n\u00e6rv\u00e6r af afgreningsenzymer hydrolyseres \u03b1-1,6-glykosidbindingen i \u03b1-dextrin- og \u03b2-dextrin-arterne, og de forgrenede k\u00e6der fjernes.<\/p>\n<p>De resterende lige k\u00e6der hydrolyseres derefter af \u03b1-amylase og \u03b2-amylase for at producere maltose og glukose. R-amylaser kan dog ikke direkte hydrolysere de \u03b1-1,6-glykosidiske bindinger i forgrenet stivelse.<\/p>\n<p><strong>Glykosylerende amylase og dens virkning<\/strong><\/p>\n<p>Glykosylerende amylase eller glucoamylase er et enzym, der hydrolyserer stivelse til glukose, hvor hydrolyseprocenten kan n\u00e5 100%, og bruges ofte som et saccharificerende middel til stivelse. Glucoamylase er ikke s\u00e6rlig specifik og kan anvendes p\u00e5 mange stoffer, det kan ikke kun klippe \u03b1-1,4-glykosidbindingen fra den ikke-reducerende ende af stivelsesmolekylet, men ogs\u00e5 klippe \u03b1-1,6-glykosidbindingen, bare at hydrolysen af \u03b1-1,4-glykosidbindingen er lidt hurtigere.
