Ud over sine antioxidanteffekter er C-vitamin ogs\u00e5 kendt for at fremme v\u00e6kst og udvikling, styrke immunforsvaret, fremme jernoptagelsen og forebygge fork\u00f8lelse og influenza hos friluftsmennesker.<\/p>\n<p>Acerola-kirseb\u00e6r, almindeligvis kendt som vestindiske kirseb\u00e6r, er rige p\u00e5 C-vitamin, hvor massefraktionen af C-vitamin er s\u00e5 h\u00f8j som 1.215 til 3.024 mg\/kg, hvilket g\u00f8r dem til en fremragende naturlig kilde til C-vitamin.<\/p>\n<p>P\u00e5 det kinesiske mejerimarked er det sj\u00e6ldent at se yoghurt beriget med C-vitamin. Saccharose, der tils\u00e6ttes yoghurt for at neutralisere den sure smag, har en beskyttende effekt p\u00e5 C-vitaminet.<\/p>\n<p>Denne artikel unders\u00f8ger stabiliteten af C-vitamin i acerolakirseb\u00e6r i yoghurt med det form\u00e5l at give ideer til udvikling af n\u00e6ringsberigede og rent m\u00e6rkede produkter.<\/p>\n<p><strong>Effekt af forskellige emballageformer p\u00e5 C-vitamin i yoghurt<\/strong><\/p>\n<p>P\u00e5 grund af de tre emballageformers forskellige ilt- og lystransmissionshastigheder blev den efterkogte yoghurt opdelt i forskellige emballageformer og opbevaret i lyset ved en lav temperatur p\u00e5 2 \uff5e 6 \u2103 i 20 dage til bestemmelse af C-vitaminindholdet, og resultaterne er vist i tabel 1:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5984\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/08\/1-187.png\" alt=\"\" width=\"532\" height=\"229\" \/><\/p>\n<p>Som det fremg\u00e5r af tabel 1, var tabet af C-vitaminindhold i glas- og PE-flasker lille, mens tabet af C-vitamin i sorte og hvide filmposer n\u00e5ede op p\u00e5 30,77%. Det kan skyldes den h\u00f8jere iltgennemtr\u00e6ngelighed i sorte og hvide folieposer, at C-vitamin let inaktiveres ved oxidation.<\/p>\n<p><strong>Effekt af forskellige opbevaringstemperaturer p\u00e5 C-vitamin i yoghurt<\/strong><\/p>\n<p>For at verificere temperaturens effekt p\u00e5 C-vitaminets stabilitet blev den efterkogte yoghurt opdelt i PE-flasker og anbragt i 2-6 \u00b0C og stuetemperatur (20-30 \u00b0C) til bestemmelse af C-vitaminets massefraktion, og resultaterne er vist i tabel 2.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5985\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/08\/2-168.png\" alt=\"\" width=\"514\" height=\"231\" \/><\/p>\n<p>Som det fremg\u00e5r af tabel 2, var tabet af C-vitamin i yoghurt under lave temperaturer fra 2 til 6 \u00b0C mindre 15,38%, og under omgivelsesbetingelser udgjorde tabet af C-vitamin 84,25%, hvilket indikerer, at omgivelsesbetingelserne (20-30 \u00b0C) har en st\u00f8rre effekt p\u00e5 stabiliteten af C-vitamin.<\/p>\n<p><strong>Stabilitet af C-vitamin i yoghurt med lang holdbarhed<\/strong><\/p>\n<p>Yoghurten blev h\u00e6ldt p\u00e5 PE-flasker og anbragt i k\u00f8leskab ved 2~6\u00b0C i 21 dage. C-vitaminmassefraktionen blev unders\u00f8gt hver 3. dag, og resultaterne er vist i fig. 1.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5986\" src=\"https:\/\/longchangextracts.com\/wp-content\/uploads\/2024\/08\/3-156.png\" alt=\"\" width=\"397\" height=\"284\" \/><\/p>\n<p>Som det fremg\u00e5r af figur 1, falder C-vitaminindholdet i yoghurt med stigende opbevaringstid, med et tab p\u00e5 18,25% C-vitamin p\u00e5 den 21. dag.<\/p>\n<p><strong>Opsummering<\/strong><\/p>\n<p>Unders\u00f8gelsen viste, at tabet af C-vitamin i yoghurt med acerolakirseb\u00e6rpulver i l\u00f8bet af holdbarheden var 18,25%. Den bedste stabilitet af C-vitamin blev fundet i yoghurt pakket i glas- og PE-flasker med et tab p\u00e5 henholdsvis 7,69% og 15,38% og i sort-hvid film med et tab p\u00e5 30,77%.<\/p>\n<p>Opbevaringstemperaturen har en st\u00f8rre indvirkning p\u00e5 stabiliteten af C-vitamin. Tabet af C-vitamin n\u00e5r 84,25% ved stuetemperatur, og farven \u00e6ndres.<\/p>\n<p>N\u00e5r man udvikler yoghurt, der indeholder C-vitamin, b\u00f8r man derfor overveje emballageformer med lavere iltgennemtr\u00e6ngelighed, s\u00e5som glas- og PE-flasker.
