Derfor er forst\u00e5else og beherskelse af sammens\u00e6tningen og indholdet af aromakomponenter i rosensaft af stor vejledende betydning for den rationelle forarbejdning og udnyttelse af rosensaft.<br \/>\nDispersionsv\u00e6ske-v\u00e6ske-mikroekstraktion (DLLME) er en ny v\u00e6skefasemikroekstraktionsteknik foresl\u00e5et af Rezaee et al., som er baseret p\u00e5 dannelsen af dispergerede sm\u00e5 dr\u00e5ber i pr\u00f8veopl\u00f8sningen af ekstraktionsmidlet under p\u00e5virkning af dispersionsmidlet, hvilket danner et trefaset emulsionssystem af pr\u00f8veopl\u00f8sningen af ekstraktionsmidlet og dispersionsmidlet. De optimerede parametre for v\u00e6ske-v\u00e6ske mikroekstraktionsmetoden er: pr\u00f8vevolumen p\u00e5 7,0 ml, ultralydassisteret ekstraktionstid p\u00e5 3 minutter, ekstraktionsmiddel og dosering af 200 \u03bc L dichlormethan, dispergeringsmiddel af acetonitril og volumenforhold mellem ekstraktionsmiddel og dispergeringsmiddel p\u00e5 1: 2. Under optimerede parametre blev der identificeret i alt 62 aromakomponenter i rosendug, herunder 52 i rosencellevand, 42 i rosenvand, 46 i frisk blomstervand og 47 i syltet blomstervand. Aromakomponenterne med relativt h\u00f8jt indhold omfatter citronellol, hydroxycitronellol, eugenol, linalool, \u03b1-terpineol, phenylethanol, nerol, geraniol, metyl-eugenol osv. Der er forskelle i det relative indhold og sammens\u00e6tningen af aromakomponenterne i rosencellev\u00e6ske, rosenvand fremstillet ved forskellige forarbejdningsteknikker og rosenvand fra forskellige producenter. De eksperimentelle resultater giver et teoretisk grundlag for unders\u00f8gelsen og udviklingen af den karakteristiske aroma af rosendug.
