Sulfatering af polysaccharider kan forbedre deres strukturelle egenskaber betydeligt, forbedre deres biologiske aktivitet og endda give dem nye biologiske aktiviteter. Yang et al. unders\u00f8gte sulfatering af natto-polysaccharider ved hj\u00e6lp af chlorosulfat-pyridin-metoden, og den antibakterielle aktivitet af sulfaterede natto-polysaccharider blev forbedret. Plantago asiatica-polysaccharider med lav viskositet blev fremstillet ved sulfateringsmetode og derefter isoleret og renset for at fremstille homogene polysaccharider.
