Blandt dem har dampet bregne-te en enkel forarbejdningsteknologi, praktisk og hurtigt forbrug og er mere befordrende for industrialisering og produktfremme. Det har biologiske aktiviteter som immunregulering, antibakteriel aktivitet og regulering af tarmens mikrobiota. Unders\u00f8gelser har vist, at strukturen af polysaccharider har en betydelig indvirkning p\u00e5 deres biologiske aktivitet. Under gaseksplosionsprocessen gennemg\u00e5r komponenter som cellulose og hemicellulose i planter\u00e5varer hydrolyse for at producere opl\u00f8selige sukkerarter, mens reducerende sukkerarter og aminosyrer gennemg\u00e5r Maillard-reaktion, hvilket for\u00e5rsager \u00e6ndringer i sukkerkomponenternes struktur. I lyset af dette indsamlede denne unders\u00f8gelse t\u00f8rrede pr\u00f8ver af bregner fra fire forskellige produktionsomr\u00e5der og sammenlignede det samlede polysaccharidudbytte efter behandling med den samme dampeksplosionsproces. Efter den samme dampeksplosionsproces blev det samlede polysaccharidudbytte af pr\u00f8verne testet. Det viste sig, at det samlede polysaccharidudbytte af dampeksplosionspr\u00f8ver af bregner steg markant (P&lt;0,05) med 55% sammenlignet med t\u00f8rrede bregner, hvilket bekr\u00e6fter, at dampeksplosionsbehandling kan forbedre polysaccharidudbyttet og opn\u00e5 bregnepolysaccharider mere effektivt.
