Minimeret forarbejdning<\/p>\n<p>Proceshj\u00e6lpemidler forbedrer produktets kvalitet under forarbejdningen, men forbliver ikke i det endelige produkt, fordi de ofte \u00f8del\u00e6gges eller fjernes under forarbejdningen. Lovgivningen kr\u00e6ver ikke, at s\u00e5danne stoffer angives p\u00e5 produktetiketter, s\u00e5 brugen af hj\u00e6lpestoffer i stedet for kemiske tils\u00e6tningsstoffer giver en ny tilgang til ren m\u00e6rkning af f\u00f8devareprodukter.<br \/>\nEnzymer er den mest anvendte klasse af proceshj\u00e6lpemidler. Under bageprocessen \u00f8del\u00e6gges bageenzymer, som udf\u00f8rer forbedrede funktioner, af h\u00f8je bagetemperaturer og beh\u00f8ver derfor ikke at blive deklareret p\u00e5 etiketten. Derfor giver bageenzymer mulighed for at opn\u00e5 ren m\u00e6rkning af bagv\u00e6rk.<br \/>\nTidligere blev naturlige enzymer traditionelt brugt i br\u00f8dfremstilling for at forl\u00e6nge fermenteringstiden. Naturlige enzymer i hvedemel nedbryder stivelse, proteiner, ikke-stivelsesholdige polysakkarider og lipider, hvilket resulterer i br\u00f8d af bedre kvalitet med en mere smagfuld og n\u00e6ringsrig smag. I dag er enzymer anerkendt af industrien som vigtige proceshj\u00e6lpemidler, f.eks. i dejh\u00e5ndtering for at kontrollere fugttab og dermed forl\u00e6nge produktets holdbarhed.<br \/>\nBageenzymer til ren m\u00e6rkning<br \/>\n1. Lipase reducerer fedtbehovet i bageriprodukter For at im\u00f8dekomme forbrugernes eftersp\u00f8rgsel har bageriindustrien fors\u00f8gt at reducere m\u00e6ngden af fedt i sine produkter. Men fedt spiller en r\u00e6kke funktionelle roller i forarbejdningen af kager, sm\u00e5kager og bagv\u00e6rk og har stor betydning for slutproduktets tekstur og holdbarhed. Hvis fedtindholdet reduceres i bagv\u00e6rk, skal der derfor tils\u00e6ttes andre ingredienser for at kompensere for disse funktioner.<\/p>\n<p>Fedt er et sm\u00f8remiddel, der hj\u00e6lper med at bl\u00f8dg\u00f8re dejen og forbedre dejens flydeevne i br\u00f8d og kager uden at kl\u00e6be. Hvis man reducerer fedtindholdet i en opskrift, kan det resultere i, at dejen kl\u00e6ber til forme og overf\u00f8rselsflader, hvilket \u00f8ger dejspildet og kr\u00e6ver ekstra reng\u00f8ring. Emulgatorer kan bruges til at erstatte nogle af fedtets funktioner, men emulgatorer er f\u00f8devaretils\u00e6tningsstoffer, som skal medtages p\u00e5 ingredienslisten for et produkt, og som forbrugerne sandsynligvis vil finde anst\u00f8delige.<\/p>\n<p>Lipaser, som enzymatisk kan opl\u00f8se fedtstoffer og olier i melingredienser for at f\u00e5 fat i fedtet, bruges til br\u00f8d- og kagefremstilling for at reducere m\u00e6ngden af fedt i opskrifterne. Eksperimenter har vist, at jo bedre gaskammerets stabilitet er, jo hurtigere udvides luftboblerne, og jo st\u00f8rre bliver br\u00f8dets volumen. Det vil sige, at n\u00e5r der tils\u00e6ttes lipase til dejen, \u00f8ges br\u00f8dets volumen, og krummekvaliteten forbedres markant.<br \/>\n2. Amylase reducerer sukkerbehovet i bagv\u00e6rk Ligesom med fedtstoffer er det en prioritet for mange bagere at reducere sukkerindholdet i produkter. P\u00e5 samme m\u00e5de spiller sukker en r\u00e6kke funktionelle roller i forarbejdningen af kager, sm\u00e5kager og bagv\u00e6rk, s\u00e5som at give smag, kontrollere dejens viskositet, fugte og give farve gennem den meladiske reaktion, for at n\u00e6vne nogle f\u00e5. Men for store m\u00e6ngder sukker kan \u00e6ndre de kinetiske processer i fermenteringen og kan f\u00f8re til problemer med automatiseringen.<\/p>\n<p>I dagens verden, hvor folk konstant er p\u00e5 udkig efter sundere ideer, er det brugen af enzymer til at producere s\u00f8dme i bagv\u00e6rk i stedet for at tils\u00e6tte sukker direkte, der falder ind under clean label for bagv\u00e6rk. For eksempel bruger g\u00e6r fermenterbart sukker produceret af amylase til at danne dej p\u00e5 en mere kontrolleret m\u00e5de, hvor langsommere kuldioxidproduktion forhindrer skader p\u00e5 det skr\u00f8belige netv\u00e6rk af luftbobler i gluten.<br \/>\nAmylase arbejder langsomt for at opretholde sukkerbalancen, indtil g\u00e6ren er inaktiveret ved ca. 55 \u00b0C. N\u00e5r g\u00e6ren er inaktiveret, forts\u00e6tter amylasen med at producere sukker, indtil amylasen inaktiveres under bageprocessen. P\u00e5 den m\u00e5de er der en lille m\u00e6ngde sukker i dejen, som fremmer den meladiske reaktion, hvor skorpen bliver brun og giver en vis smag.<br \/>\n3. Xylanase \u00f8ger fiberindholdet i bagv\u00e6rk Fibre er godt for helbredet, s\u00e5 mange bagere fors\u00f8ger at \u00f8ge fiberindholdet i bagv\u00e6rk. Men fibre som klid absorberer meget vand og g\u00f8r det langsommere end andre ingredienser i dejen.<br \/>\nN\u00e5r fibrene absorberer fugt, strammes dejen, hvilket g\u00f8r h\u00e5ndteringen vanskelig. Dejens manglende evne til at udvide sig begr\u00e6nser g\u00e6rens virkning, hvilket igen f\u00f8rer til d\u00e5rlig br\u00f8dkvalitet og d\u00e5rlig st\u00f8bning. Som svar p\u00e5 disse problemer bryder xylanase de glykosidiske bindinger mellem store fiberk\u00e6der for at frig\u00f8re sukker med lav molekylv\u00e6gt og vand. Dette hj\u00e6lper med langsomt at bl\u00f8dg\u00f8re dejen, omfordele vandet, forbedre luftkammerets duktilitet og stabilitet og forbedre dejens bearbejdelighed.<\/p>\n<p>I bagv\u00e6rk er glukoseoxidase og lipoxygenase desuden gavnlige til at styrke gluten; glutamintransferase kan bruges til at berige hvedemelproteiner; protease nedbryder peptidk\u00e6der til sm\u00e5 peptider og aminosyrer, som bl\u00f8dg\u00f8r kagedej, s\u00e5 den flyder bedre; asparaginase, som reducerer akrylamidniveauet i bagv\u00e6rk, og s\u00e5 videre.<\/p>\n<p>Enzymer, der anvendes i f\u00f8devareproduktionen, bliver mere og mere udbredte, og de typer af enzymer, der anvendes i bageriet, bliver ogs\u00e5 mere og mere udbredte, og bagv\u00e6rk er med udviklingen af enzymer skridt for skridt p\u00e5 vej mod ren m\u00e6rkning.<\/p>","protected":false},"excerpt":{"rendered":"<p>Hvad er enzymer?
